Why Water Is Everything
At its heart, roti dough is a simple mix of whole wheat flour (atta) and water. But the role of water is complex and crucial. When water mixes with the proteins in the flour, glutenin and gliadin, it forms gluten. This gluten network gives the dough its structure
and elasticity. If there's too little water, the flour isn't fully hydrated. This means a weak gluten network and a dough that is dense, tough, and prone to cracking when you try to roll it out. Proper hydration results in a pliable dough that is a joy to work with.
Finding the Right Hydration Level
There is no single magic water-to-flour ratio, as different brands of atta absorb water differently. Instead of following a rigid recipe, learn to go by feel. The goal is a soft, pliable dough that is slightly tacky but doesn't stick to your hands. A good starting point is often around 1 cup of water for every 2 cups of flour, but be prepared to adjust. Add water gradually, mixing with your hands until the dough comes together. If you press a finger into the finished dough, it should leave a distinct impression. Using lukewarm water can also help the flour absorb moisture more effectively and relax the gluten faster.
The Art of Kneading
Once you have the right amount of water, kneading develops the gluten structure. Proper kneading is essential for a soft, elastic texture. Use the heel of your hand or your knuckles to push the dough down and away from you, then fold it over and repeat. This process should take about 8-10 minutes. The final dough should feel smooth and supple. Be careful not to over-knead, as this can make the dough tough. Just knead until it feels elastic and smooth. Adding a teaspoon of oil or ghee during the final stages of kneading can also help keep the dough soft and prevent it from drying out.
The Power of Patience: Resting the Dough
One of the most important, and often skipped, steps is resting the dough. After kneading, cover the dough with a damp cloth or plastic wrap and let it sit for at least 20 to 30 minutes. This resting period allows the flour to fully absorb the water, which distributes moisture evenly throughout the dough. It also allows the gluten network, which will be tight after kneading, to relax. This makes the dough significantly easier to roll out and helps ensure the rotis puff up beautifully during cooking and remain soft.
Troubleshooting: How to Fix Stiff Dough
What if you’ve already made your dough and it feels like a rock? Don't throw it out. You can often salvage a stiff dough. Simply add a small amount of water—start with just a teaspoon—and knead it in thoroughly. Continue adding water drop by drop and kneading until the dough reaches that desired soft, pliable consistency. It will take a little extra work, but it’s much better than starting over or struggling with dough that refuses to cooperate. After you've adjusted the texture, be sure to let it rest again for about 15-20 minutes to let the gluten relax.
