First, let's clarify what cold brew is. Unlike iced coffee, which is typically brewed hot and then cooled down, cold brew is made by steeping coffee grounds in cold or room-temperature water for an extended period, usually between 12 and 24 hours. This
isn't just a matter of temperature; it's a fundamental change in the chemistry of extraction. Hot water rapidly pulls a wide range of compounds from the coffee grounds. Cold water, on the other hand, is a much slower and more selective solvent, leading to a profoundly different result in the cup.
Why Coarse Grounds are Key
The single most important variable you control in this process is the grind size. For cold brew, a coarse grind—think the texture of rough sea salt or breadcrumbs—is essential. The reason is all about surface area and extraction time. Finer grounds have more surface area, which means water can extract flavours, oils, and acids from them very quickly. This is great for a quick espresso shot but disastrous for a long steep. Over 12-plus hours, a fine grind would lead to over-extraction, resulting in a brew that is intensely bitter and silty. Cold water is far less effective at dissolving these particular compounds.
