In contrast, refined oils go through a multi-step industrial process. This often involves high heat, pressing, and the use of solvents like hexane to extract the maximum amount of oil. What is a Smoke Point and Why Does It Matter?
An oil's smoke point is the temperature at which it stops shimmering and starts to visibly smoke. This is a sign that the oil is breaking down. For maximum health benefits and flavour, cold-pressed oils are superior when used in applications that don't involve high heat. Their nutrient density is a clear winner for cold dishes. However, for high-heat cooking, a refined oil is the healthier and safer choice because it prevents the creation of harmful compounds that occur when an oil burns. For example, a refined avocado oil has a very high smoke point (around 270°C), making it excellent for searing, whereas using an unrefined extra virgin olive oil for the same task would cause it to smoke and degrade.
