Monsoon snacking in India often means indulging in hot, crispy pakoras and samosas. While delicious, these deep-fried snacks can feel heavy. This is where the watermelon popsicle comes in as a brilliant counterpoint. Made from just one core ingredient,
it offers pure, unadulterated flavour without any added sugars or oils. It’s a snack that hydrates, refreshes, and satisfies a sweet craving all at once. Watermelon itself is over 90% water, making these popsicles an excellent way to stay hydrated, which is just as important on humid, rainy days as it is in the summer heat. It’s the perfect guilt-free treat for both kids and adults to enjoy while watching the rain fall.
The Three-Step Method to Perfection
The beauty of this recipe lies in its simplicity. You need only one ingredient: a ripe watermelon. For equipment, you'll need a blender and popsicle moulds. If you don't have moulds, small steel tumblers or even paper cups will work just fine. 1. Blend: Cut the watermelon flesh into cubes, removing the rind. Don't worry about the small white seeds; a good blender can pulverise them, but you may want to remove any large black seeds first. Place the cubes in a blender and blend until you have a completely smooth liquid. This should only take about 30 seconds. 2. Pour: Once blended, pour the vibrant juice directly into your popsicle moulds. Be sure to leave a little bit of space at the top, as the liquid will expand when it freezes. 3. Freeze: Place the moulds in the freezer. For the best results and a solid freeze, leave them for at least six to eight hours, or preferably overnight. Patience is key to achieving that perfect, solid popsicle texture.
Tips for the Best Popsicles
While making these popsicles is incredibly straightforward, a few tips can elevate the final product. First, choosing the right watermelon is crucial. Look for one that feels heavy for its size and has a creamy yellow spot on its underside—a sign that it ripened on the vine and will be sweet and juicy. A sweet watermelon means you won't need to add any extra sweeteners. For a smoother, more juice-like texture, you can pour the blended liquid through a fine-mesh strainer before pouring it into the moulds. This will remove any pulp. However, leaving the pulp in adds extra fibre. To easily remove the frozen popsicles from their moulds, simply run the outside of the mould under warm water for about 10-20 seconds. This will loosen them just enough to slide out without a struggle.
Easy, Optional Upgrades
While the single-ingredient version is fantastic on its own, you can easily introduce other flavours without complicating the process. For a tangy kick that beautifully complements the watermelon's sweetness, add a squeeze of fresh lime juice to the blender. A few fresh mint leaves blended with the watermelon will add a cooling, aromatic layer of flavour, reminiscent of a virgin mojito. For a uniquely Indian twist, consider adding a tiny pinch of black salt (kala namak) or chaat masala before freezing. This classic sweet-and-salty combination works wonderfully in frozen treats. You could also add other fruits like strawberries or a splash of coconut water for extra hydration.
