There are few things more refreshing on a hot day than a tall, frothy glass of cold coffee. While cafés have their complex variations, the classic Indian-style cold coffee is simple and relies on just a few basic ingredients. The secret is in creating
a smooth coffee-sugar mixture before blending everything together. For a truly café-like experience, you can even add a scoop of vanilla ice cream. To start, you will need instant coffee powder, sugar, milk, and ice cubes. The key is to dissolve the coffee and sugar first. In a blender, combine two teaspoons of instant coffee, two to three teaspoons of sugar, and a splash of warm water or milk. Blend this for a few seconds until it forms a smooth, frothy paste. This step ensures there are no coffee granules in your final drink. Next, add about 250 ml of chilled, full-fat milk to the blender along with a handful of ice cubes. Blend again for about 30 seconds or until the coffee is wonderfully frothy and combined. Pour into a tall glass and enjoy immediately. For a richer treat, add a scoop of vanilla ice cream before the final blend.
Soothing Ginger-Turmeric Tea (Haldi Adrak Chai)
Ginger-turmeric tea, often prepared as a 'kadha' or a simple chai, is a staple in many Indian households, especially during monsoon or winter. It’s a wonderfully warming and comforting drink, perfect for soothing a sore throat or just unwinding after a long day. You can make this healing brew with either fresh roots or dried powders. For the freshest flavour, use a one-inch piece of fresh ginger and a one-inch piece of fresh turmeric, both peeled and grated or finely chopped. Combine the ginger and turmeric in a saucepan with two cups of water. Add a pinch of black pepper, which is said to help with the absorption of curcumin from the turmeric, and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10 to 15 minutes. This allows the flavours and beneficial compounds to infuse into the water. After simmering, strain the tea into a mug. You can add a squeeze of fresh lemon juice for brightness and a teaspoon of honey or jaggery for sweetness once the tea has cooled slightly. If you prefer a milk-based version, you can add tea leaves after simmering the spices, followed by milk and sugar to create a proper haldi adrak chai.
Simple, Budget-Friendly Vegetable Soup
A simple vegetable soup is the ultimate comfort food—it’s light, nutritious, and incredibly easy to make with whatever you have in your fridge. It's a perfect solution for a quick weeknight dinner or a light meal when you're feeling under the weather. The best part about this soup is its flexibility. A base of onions, ginger, and garlic provides a flavourful start. From there, you can add any vegetables you like, such as carrots, beans, peas, corn, cabbage, or potato. For a classic, budget-friendly soup, start by heating a tablespoon of oil or butter in a pressure cooker or a deep pot. Add chopped garlic and ginger, followed by one chopped onion, and sauté until fragrant. Then, add your mix of finely chopped vegetables—about two to three cups in total. Sauté for a couple of minutes before adding four cups of water or vegetable stock. Season with salt and black pepper. If using a pressure cooker, lock the lid and cook for about two to three whistles. If using a pot, bring it to a boil and then let it simmer for 15-20 minutes, or until the vegetables are tender. To thicken the soup slightly, you can make a slurry by mixing one tablespoon of cornstarch with a quarter cup of cold water and stirring it into the simmering soup.
