Easy Toasted Amaranth Energy Bar Recipe
**Ingredients:**
- 1 cup popped amaranth (rajgira)
- 1 cup rolled oats
- ½ cup mixed nuts (almonds, walnuts), roughly chopped
- ¼ cup mixed seeds (pumpkin, sunflower, chia)
- ½ cup soft dates, pitted
- ¼ cup honey or maple syrup
- ¼ cup natural peanut butter or almond butter
- 1 teaspoon vanilla extract
- A pinch of salt
**Instructions:**
1. **Toast the Base:** In a dry pan over medium heat, toast the rolled oats and chopped nuts for 3-5 minutes until fragrant. Transfer to a large mixing bowl and add the popped amaranth and seeds.
2. **Create the Binder:** In a small saucepan, gently heat the honey/maple syrup and peanut/almond butter until smooth and well-combined. If your dates are not soft, you can add them to the saucepan to soften them. Otherwise, finely chop or mash them.
3. **Combine Everything:** Pour the warm liquid mixture over the dry ingredients in the bowl. Add the mashed dates, vanilla extract, and salt. Mix thoroughly until everything is sticky and evenly coated.
4. **Press and Set:** Line an 8x8 inch square pan with parchment paper. Transfer the mixture to the pan and press down firmly and evenly with a spatula or the back of a spoon. The firmer you press, the better the bars will hold together.
5. **Chill:** Place the pan in the refrigerator for at least one hour to set. Once firm, lift the block out using the parchment paper and cut into 10-12 bars.
