The fundamental difference between cold-pressed and refined oils lies in how they are made. Cold-pressed oils are extracted using a mechanical press that crushes seeds or nuts at a low temperature, without using external heat or chemical solvents. This
gentle process helps the oil retain its natural flavour, aroma, and, most importantly, its nutrients like antioxidants and vitamins. Think of it as a more traditional and less-processed method. Refined oils, on the other hand, go through a multi-stage industrial process. Extraction often involves high heat and chemical solvents, like hexane, to get the maximum amount of oil from the seed. Afterwards, the oil is treated to be bleached, deodorized, and neutralized. This process creates a more stable oil with a longer shelf life and a neutral taste, but it also strips away many of the beneficial nutrients, antioxidants, and natural flavours found in the original seed.
Smoke Points: Not Always a Simple Story

Cold-pressed oils are rich in monounsaturated (MUFA) and polyunsaturated (PUFA) fats, which are known to help lower bad cholesterol levels when they replace saturated fats in the diet. Refined oils, having been stripped of these nutrients, offer fewer health benefits. While they still contain MUFAs and PUFAs, their antioxidant content is significantly lower. For Sautéing and Tadkas: Many cold-pressed oils work beautifully here. Cold-pressed mustard oil, with its pungent flavour and good stability, is a staple in many Indian kitchens.
