A Fruit Steeped in Tradition
Long before it became a global vegan sensation, the jackfruit, or 'chakka', was an integral part of Kerala's culinary and cultural landscape. Declared the state fruit in 2018, its history is woven into the fabric of daily life, often growing in family
backyards alongside coconut and mango trees. Historically, it was known as a dependable and affordable food source, a 'poor man's fruit' that saw families through lean times. Its most famous traditional preparations include 'chakka puzhukku', a hearty mash of raw jackfruit and coconut often paired with spicy fish curry, and 'erissery', a special occasion dish served during festivals like Onam. The ripe fruit was transformed into sweet preserves like 'chakka varatti' or decadent 'pradhaman' (payasam), while the unripe fruit and even its seeds found their way into a variety of stir-fries and curries. This versatility has made it a mainstay for centuries.
The Modern Makeover
Today's urban kitchens are moving far beyond these classic preparations. The rediscovery is being led by a new generation that is experimenting with the fruit's unique properties. The dense, fibrous texture of raw jackfruit, which soaks up spices beautifully, makes it a remarkable meat substitute. This has led to an explosion of innovative dishes that are finding favour with urban families. Think of jackfruit burgers, tacos with pulled jackfruit that mimics pork, and even kathal biryani. Agripreneurs and home chefs are developing hundreds of value-added products, from jackfruit pasta and noodles to flour that can be incorporated into everyday meals. Even the often-discarded seeds are being given a new lease on life, transformed into nutritious hummus, crispy crackers, and falafel.
Why the Renewed Interest?
Several factors are driving this jackfruit renaissance. A growing global and local interest in plant-based diets is a major contributor, with jackfruit's meaty texture making it a popular and natural alternative. Health consciousness also plays a crucial role. Jackfruit flour, made from the dried fruit, is being hailed for its health benefits, including being high in fibre and having a low glycemic index, which can help in managing blood sugar levels. This has made it an attractive ingredient for families looking to make their daily meals healthier without compromising on tradition. Furthermore, there's a strong element of nostalgia and a desire to reconnect with culinary heritage. For many urban dwellers, these new forms of jackfruit are a way to celebrate a familiar flavour from their childhood in a modern, convenient way.
From Backyard to Superfood
The movement is supported by both grassroots innovation and government initiatives. Entrepreneurs like Rajasree R, who has developed over 400 products from jackfruit, are at the forefront, turning a humble fruit into a commercial success. Simultaneously, state-level efforts are underway to promote jackfruit's health benefits and ensure more of the massive annual harvest is utilized effectively. By re-introducing the fruit's benefits to younger generations through school and college campaigns, the state hopes to cement its value. This combination of culinary creativity, health awareness, and cultural pride is transforming the jackfruit from a seasonal backyard fruit into a celebrated superfood. It's a story of how a traditional ingredient can be reimagined to fit contemporary lifestyles, proving that sometimes the most exciting new trends are rooted deep in the past.
