The Star Ingredient: What is Sattu?
Before diving into the recipe, it’s essential to understand the hero ingredient. Sattu is a flour made from roasted Bengal gram (chana) or other ground pulses and cereals. Often hailed as a superfood in regions like Bihar, it is celebrated for its nutritional
density. Unlike besan (gram flour), which is made from unroasted chickpeas, sattu is made from roasted ones, giving it a distinct nutty flavour and a darker colour. It's rich in plant-based protein, fibre, iron, and magnesium, making it an excellent addition to any diet. Its low glycemic index is beneficial for managing blood sugar levels, and it acts as a natural coolant, making it popular during hot summer months.
Gathering Your Ingredients
For this recipe, you will need ingredients for both the dough and the spicy filling. For the dough, you'll need 2 cups of whole wheat flour (atta), salt to taste, and water to knead. For the flavourful sattu filling, gather 1 cup of sattu, 1 finely chopped onion, 2-3 finely chopped green chillies, 1 teaspoon of grated ginger, and 2-3 minced garlic cloves. You will also need spices like ½ teaspoon of carom seeds (ajwain) and ½ teaspoon of nigella seeds (kalonji). For that authentic Bihari tang, 1 tablespoon of mustard oil and 1-2 teaspoons of masala from a mango or lemon pickle are crucial. Finally, have some chopped fresh coriander, lemon juice, and salt ready.
Crafting the Spicy Sattu Filling
The heart of the paratha lies in its zesty filling. In a mixing bowl, combine the sattu with the finely chopped onion, green chillies, ginger, garlic, and fresh coriander. Add the ajwain, kalonji, and salt. Now, for the signature taste, drizzle in the mustard oil and the pickle masala. The combination of pungent mustard oil and tangy pickle is what gives the sattu paratha its unique and unforgettable flavour. Mix everything well. The mixture will be crumbly. Add a few teaspoons of water, just enough to moisten it so that it holds together when pressed, but isn't wet or pasty. Divide this mixture into equal portions and set aside.
Preparing the Dough and Assembling
To make the dough, simply combine the whole wheat flour and a pinch of salt in a large bowl. Gradually add water and knead until you have a soft, pliable dough, similar to what you would make for regular rotis. Cover it with a damp cloth and let it rest for about 20-30 minutes. Once rested, divide the dough into equal-sized balls. Take one ball and flatten it with your fingers to create a small disc, keeping the centre slightly thicker than the edges. Place a portion of the sattu filling in the middle. Carefully bring the edges of the dough together to cover the filling, pinching them at the top to seal it completely. Gently flatten the stuffed ball and dust it with some dry flour.
Cooking to Golden Perfection
Using a rolling pin, gently roll the stuffed dough ball into a paratha of even thickness, about 6-7 inches in diameter. Be careful not to apply too much pressure, as this can cause the filling to break through the dough. Heat a tawa (griddle) over medium heat. Place the rolled paratha on the hot tawa and cook for about a minute, or until you see small bubbles appear on the surface. Flip it over and apply a little ghee or oil to the half-cooked side. Flip again and apply ghee or oil to the other side. Press the paratha gently with a spatula, especially around the edges, to ensure it cooks evenly. Cook until both sides have golden brown spots and the paratha is crisp.
Serving Suggestions for a Complete Meal
Sattu Paratha is incredibly versatile and can be enjoyed in many ways. It is traditionally served hot, straight from the tawa. For a classic Bihari breakfast or lunch, pair it with a bowl of plain curd (dahi), your favourite pickle, or a simple green chutney. It also goes exceptionally well with rustic side dishes like Baingan ka Bharta (smoked eggplant mash) or Aloo ka Chokha (spiced mashed potatoes). For a complete and satisfying meal, you can serve it alongside a simple potato and tomato curry. These parathas are quite filling and can keep you energised for hours.
