This approach allows them to highlight the unique flavours of Indian cacao, influenced by the local terroir where it's often inter-cropped with coconut, spices, and fruit. Soklet: From Their Tree to Your Bar
Based in the Anamalai foothills of Tamil Nadu, Soklet takes the craft a step further by being a 'tree-to-bar' producer. This means they grow the cacao on their own organic plantations, giving them unparalleled control over quality. Founders Karthikeyan Palaniswamy and Harish Manoj Kumar manage their farm using permaculture principles, growing cacao alongside nutmeg, pepper, and banana, which subtly influence the beans' flavour profile. Soklet is known for retaining the natural antioxidants in their non-alkalised chocolate and for creative bars that incorporate Indian flavours, such as their Desi Rabdi or spicy Bhut Jolokia chilli-infused options. Mason & Co: Ethical, Organic, and Artisanal
Founded in Auroville by Jane Mason and Fabien Bontems, Mason & Co has been a pioneering force in India's artisanal chocolate scene. They are dedicated to producing high-quality organic, vegan chocolate and work directly with farmers in South India, ensuring fair prices and supporting sustainable agriculture. The entire chocolate-making process, from roasting to tempering, is meticulously handled by an all-female workforce in their Auroville facility. Mason & Co is known for its minimalist approach, focusing on bringing out the pure, single-origin flavours of the cacao beans. Their range includes intense dark chocolates and unique combinations like orange, espresso, and chilli cinnamon.
Paul and Mike: Award-Winning Innovation
Hailing from Kerala, Paul and Mike have gained international acclaim for their bold and inventive approach to chocolate. The brand, which operates on a 'farm-to-bar' model, sources fine-flavour cacao beans from their own farms and partner farmers across Kerala and Andhra Pradesh. They are not afraid to experiment, creating award-winning combinations that surprise and delight. Their Milk Chocolate Coated Salted Capers recently won a gold at the International Chocolate Awards, a first for an Indian brand. Though based in Hyderabad, Manam Chocolate works extensively with cacao farmers in the West Godavari district of Andhra Pradesh to elevate the quality and reputation of Indian cacao.
