The humble potato is often seen as just a source of carbohydrates. But what if a potato could offer much more? Meet Kufri Jamunia, a new variety turning heads with its vibrant purple flesh, a sign of its rich and powerful nutrient profile.
A Potato with a Purpose
Developed by
the ICAR-Central Potato Research Institute (CPRI) in Shimla, Kufri Jamunia is not your average spud. It is a 'biofortified' variety, which means it has been bred to have higher levels of micronutrients. Officially released in 2024, its standout feature is its deep purple skin and flesh, a trait that distinguishes it from other coloured varieties like Kufri Neelkanth (purple skin, cream flesh) and Kufri Manik (red skin, yellow flesh). The name 'Jamunia' itself is a nod to the deep colour of the Jamun fruit, signalling that its vibrant pigment runs through the entire tuber, not just the skin.
The Power of Anthocyanins
The striking purple hue of Kufri Jamunia comes from anthocyanins, the same group of powerful antioxidants found in blueberries, blackberries, and red cabbage. Antioxidants are compounds that help protect our bodies from damage caused by unstable molecules called free radicals. A diet rich in anthocyanins is associated with a range of health benefits, including supporting heart health and reducing inflammation. Because these beneficial compounds are present throughout the flesh of Kufri Jamunia, you get their benefits in every bite, not just from the peel. This variety contains significantly higher levels of anthocyanins compared to conventional potatoes.
The Carotenoid Contribution
Beyond its purple pigments, Kufri Jamunia also boasts a healthy dose of carotenoids. Carotenoids are another class of antioxidants responsible for the yellow, orange, and red colours in many fruits and vegetables, like carrots and pumpkins. While not a primary source of pro-vitamin A, the carotenoids in potatoes, such as lutein and zeaxanthin, are known to play a role in supporting eye health and immune function. The presence of both anthocyanins and carotenoids makes Kufri Jamunia a dual-threat against cellular damage, offering a broader spectrum of antioxidant protection than its paler counterparts.
More Than Just Colour
The nutritional benefits of Kufri Jamunia extend beyond its antioxidant content. This biofortified variety is also a rich source of Vitamin C, iron, and zinc, often containing significantly higher amounts than traditional white potatoes. For example, 100 grams of Kufri Jamunia can contain around 42.75 mg of Vitamin C and 3.22 mg of iron. This enhanced profile makes it a valuable food for addressing 'hidden hunger,' a condition where people get enough calories but lack essential micronutrients. With its mealy texture, it is versatile in the kitchen, suitable for traditional dishes, snacks, and even processed foods like nutrient-rich flour.
From Farm to Your Table
Kufri Jamunia is a medium‐maturing crop, taking about 90‐100 days to harvest. It has been recommended for cultivation across the North Indian plains, including states like Punjab, Haryana, Uttar Pradesh, and Bihar. For home cooks, this potato's benefits are best preserved through cooking methods like steaming or microwaving, which tend to retain more nutrients than boiling or stir‐frying. Its excellent storability also means it has a good shelf life, reducing waste. As awareness grows, this vibrant and nutrient‐dense potato offers a unique opportunity for consumers to add both colour and a powerful nutritional boost to their daily meals.
