The Illusion of Simplicity
A recipe ingredient list seems like a straightforward cast of characters waiting for their cue. But “add onions, carrots, celery, and garlic” is a world away from “sauté onions for 5 minutes until soft, add carrots and celery and cook for another 5 minutes,
then add garlic for the final 30 seconds.” The first instruction invites chaos; the second ensures success. The order and timing of when ingredients are added is not a suggestion—it is, in itself, an ingredient. Cooking is a series of chemical reactions, and the sequence dictates the final outcome. By omitting timing, a recipe developer withholds the fundamental science that makes the dish work, leaving the home cook to guess and, too often, to fail.
The Science of Salting
Salt is the most common and least understood ingredient when it comes to timing. Adding it at the wrong moment can ruin a dish. When you salt meat well in advance of cooking, osmosis first draws moisture out, then allows that salty brine to be reabsorbed, seasoning the meat deeply and helping it stay moist. Salt vegetables too early, however, and you’ll end up with a watery mess as the salt continuously draws liquid out. For mushrooms, salting at the beginning prevents browning and results in a rubbery texture; they should be salted only after they’ve developed colour. In bread making, salt strengthens gluten but can kill yeast on direct contact. A recipe that just lists “salt” without specifying when to use it is setting the cook up for a potential disaster.
Unlocking Flavour With Fat and Heat
Many cuisines begin by “blooming” spices—frying them in hot oil. This is not just a poetic term; it’s a crucial step where the fat extracts the spices' fat-soluble compounds, creating a flavour-infused oil that forms the foundation of the dish. Throwing those same spices into a watery sauce at the end will produce a pale imitation of the intended flavour. Similarly, the Maillard reaction—the browning process that gives seared meat, toasted bread, and roasted vegetables their deep, savoury character—can only happen in a dry, high-heat environment. Adding liquid to the pan too early drops the temperature and causes the food to steam instead of sear, completely preventing this essential flavour-building reaction from occurring. The order of operations is everything.
A Call for Clarity
Recipe developers and food writers are professionals who test their creations multiple times to perfect them. During this process, they are implicitly discovering the correct timing for every step. They know you must bloom the mustard seeds before adding the onions. They know the garlic goes in last to prevent it from burning. They know the steak must be salted at least 40 minutes ahead of time or immediately before cooking, but never in the window in between. To omit these crucial details from the final written recipe is a disservice. It’s like a scientist publishing results without a methodology. A well-written recipe should empower the home cook, not create a mystery to be solved. Listing ingredients in the order they are used is a basic first step, but it's not enough.
