A Dessert Worth the Hype
Celebrity food choices often create a buzz, but the story behind Alia Bhatt's favourite milk cake has captured the imagination of food lovers everywhere. The actress has mentioned her love for a specific milk cake from a London-based café, a treat her husband,
Ranbir Kapoor, once had specially brought for her. This public adoration turned the humble milk cake, also known as Tres Leches Cake, into a viral sensation. The dessert's appeal lies in its delightful texture: a light, airy sponge cake soaked in a trio of milks, making it incredibly moist and flavourful without being overly dense. It's the kind of comforting, classic sweet that feels both indulgent and refreshingly straightforward, a perfect match for those who appreciate simple, well-made food.
The Essential Ingredients
This recipe is broken down into three parts: the sponge cake, the milk soak, and the topping. While different versions exist, this one combines common elements for a reliable result. For the sponge, you will need approximately 1 cup of all-purpose flour, 1 teaspoon of baking powder, a pinch of salt, 3 to 4 eggs, ¾ cup of powdered sugar, ¼ cup of oil, and 1 teaspoon of vanilla essence. For the luxurious milk soak that gives the cake its signature texture, prepare 1 cup of whole milk, about ¾ cup of condensed milk, and ½ cup of evaporated milk or fresh cream. Finally, for the topping, you'll need about 1 cup of heavy whipping cream, a little powdered sugar to sweeten it, and fresh berries or strawberries for garnish.
Step 1: Baking the Perfect Sponge
Begin by preheating your oven to 180°C. In a large bowl, beat the eggs and powdered sugar together until the mixture becomes pale, light, and fluffy. This step is crucial for creating an airy sponge. Gently fold in the vanilla essence and oil. In a separate bowl, sift together the dry ingredients: all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture, mixing only until just combined. Be careful not to overmix, as this can result in a tough cake. Pour the batter into a greased baking dish and bake for 25-30 minutes, or until a skewer inserted into the centre comes out clean. Once baked, let the sponge cake cool down completely.
Step 2: The Three-Milk Soak
While the cake cools, prepare the milk mixture. In a bowl or jug, combine the whole milk, sweetened condensed milk, and evaporated milk (or fresh cream). Whisk them together until you have a smooth, homogenous liquid. This 'three milks' blend is the heart of the recipe. Once the cake has cooled completely, use a fork or a skewer to poke holes all over its surface. This allows the milk mixture to seep deep into the sponge. Slowly and evenly, pour the milk mixture over the cake, allowing it to absorb the liquid. The cake will seem very saturated, but be patient. Let it sit in the refrigerator for at least 30 minutes to an hour to fully soak in all the milky goodness.
Step 3: Finishing with Cream and Berries
The final touch is a simple, light whipped cream topping that balances the richness of the cake. In a chilled bowl, whip the heavy cream with a bit of powdered sugar until stiff peaks form. Be careful not to overwhip, or it will turn grainy. Spread this whipped cream generously over the top of the soaked cake, creating a smooth, white layer. For a beautiful and delicious finish, garnish the cake with fresh, sliced strawberries or a handful of mixed berries. The slight tartness of the fruit cuts through the sweetness of the milk and cream perfectly. Keep the finished cake refrigerated until you are ready to serve it. This dessert is best enjoyed chilled.
