In many Indian households, cooking is an intuitive art. Measurements are often done by ‘andaaz’—a skillful estimation using a familiar katori, glass, or a trusted handful. While this works beautifully for traditional recipes passed down through generations,
it can lead to confusion when trying something new from a cookbook or the internet. The 'cup' in a modern recipe doesn't refer to just any cup from your kitchen cabinet; it means a standardized measuring cup. There are two main standards: the US cup, which is about 240 ml, and the metric cup, which is 250 ml. This seemingly small difference is crucial for getting a recipe just right, ensuring that your ‘one cup of flour’ is the same as the recipe creator's.
Baking: The Science of Precision
While you can get away with a little extra spice in a curry, baking is a different story. It is a science, relying on precise chemical reactions between ingredients.
