2. Vegetable Tehri

It’s a flavourful one-pot meal where rice and vegetables are cooked together with aromatic spices. In a single pot, heat ghee and temper whole spices like bay leaves, cinnamon, and cloves. Sauté onions, ginger, and garlic before adding cubed potatoes, cauliflower florets, and green peas. Add turmeric, chilli powder, and salt, then stir in soaked basmati rice. Pour in water, bring to a boil, and let it simmer until the rice is fluffy and the vegetables are tender. Tehri is a wholesome dish that brings the delightful aroma of a feast to your dinner table with minimal effort.
3. Gujarati Dal Dhokli
For a meal that is both hearty and soupy, look no further than Dal Dhokli. This traditional Gujarati dish consists of spiced whole wheat flour dumplings simmered in a tangy and sweet lentil stew. While it might seem complex, it can be streamlined in one pot. First, prepare the dal in a pressure cooker. Add the soaked and sprouted beans, potatoes, water, and let it all cook together until the sprouts are tender and the gravy is aromatic. In a single pan or pot, sauté garlic, onions, and your choice of chopped vegetables like capsicum, carrots, and corn. Stir in tomato puree, red chilli powder, garam masala, and turmeric. Add the uncooked pasta along with water, then cover and cook until the pasta is al dente and has absorbed the spicy, tangy sauce.
