Your Pantry: A Treasure Trove of Snacks
Before you even think about recipes, take a look inside your own cupboards. A well-stocked Indian pantry is a goldmine for quick and easy snacks. Items like lentils, chickpeas, various flours like besan (gram flour) and sooji (semolina), poha (flattened
rice), and of course, spices, are the building blocks of countless creations. This guide focuses on two versatile stars: sprouts, which are packed with nutrients, and makhana (fox nuts), a light and crunchy favourite. By combining these with common ingredients like potatoes, onions, and your everyday masala dabba, you can whip up impressive snacks with minimal effort.
Crispy, Spicy Air-Fried Sprouts
Brussels sprouts might not be a traditional Indian vegetable, but they absorb spices beautifully and become incredibly crisp in an air fryer. This quick snack is perfect for a healthy, low-carb nibble. For an Indian-style twist, we'll use a mix of common spices that bring a familiar, comforting warmth to this unique vegetable. The secret is to get the sprouts dry and not overcrowd the basket, allowing the hot air to work its magic.
Method for Perfect Sprouts
Start by washing and trimming about 400 grams of Brussels sprouts, cutting them in half. In a bowl, toss them with a tablespoon of oil until they are lightly coated. Now for the flavour: add salt to taste, half a teaspoon of turmeric powder, a teaspoon of coriander powder, a teaspoon of cumin powder, and half a teaspoon of red chilli powder for some heat. You can also add garlic powder or chaat masala for extra zing. Mix well to ensure every sprout is coated. Preheat your air fryer to 190°C (375°F). Place the seasoned sprouts in the basket in a single layer and air fry for 12-15 minutes. Be sure to shake the basket halfway through to ensure they cook evenly and get crispy on all sides. They are done when the edges are browned and caramelized, and the centers are tender.
Hearty Makhana and Sprout Tikki
This recipe combines the goodness of makhana (fox nuts) and moong sprouts into a substantial, flavour-packed patty. Often enjoyed during fasting periods, makhana tikki is light on the stomach yet satisfying. Using sprouts adds a protein boost, making these tikkis a wonderfully balanced and healthy snack. They are bound together with boiled potato and seasoned with fresh herbs and spices, then air-fried to a perfect golden-brown crisp without the need for deep frying.
Crafting the Perfect Tikki
To begin, dry roast one cup of makhana in a pan until they are crunchy, then grind them into a coarse powder. In a large bowl, take one cup of sprouted moong beans (you can grind these coarsely too), the makhana powder, and two medium-sized boiled and mashed potatoes. To this mixture, add finely chopped green chillies, a handful of chopped coriander leaves, and salt to taste. For spices, add half a teaspoon of garam masala and a teaspoon of chaat masala powder. Mix everything thoroughly until it forms a dough-like consistency that can be shaped. Rub a little oil on your hands, take small portions of the mixture, and flatten them into tikkis. Lightly brush the tikkis with oil and place them in the air fryer basket in a single layer. Air fry at 180°C for 15-18 minutes, flipping them halfway through, until they are golden brown and crisp on both sides. Serve hot with mint chutney or yogurt.
