The Cooking Conundrum
The way you prepare these vegetables can either preserve or destroy their nutritional payload. Many common cooking methods unfortunately work against you. Boiling, for instance, is one of the worst offenders. Because important compounds like vitamin C and glucosinolates are water-soluble, they readily leach out into the cooking water when the vegetables are submerged. Studies have shown that boiling can strip away a significant percentage of these vital nutrients, which often end up being poured down the drain. The Science of Steaming

Even with some enzyme loss, your body's gut bacteria can help convert the preserved glucosinolates into beneficial sulforaphane.
How to Steam to Perfection
Getting the most out of your vegetables is simple. First, chop your cruciferous vegetables into uniform, bite-sized pieces. If using a steamer basket in a pot, add just enough water to sit below the level of the basket, about an inch deep. Bring the water to a boil before adding the vegetables. Place the veggies in the basket, cover the pot with a tight-fitting lid, and reduce the heat slightly to maintain a steady steam. For broccoli or cauliflower florets, this should take about 3-5 minutes. For heartier vegetables like Brussels sprouts, you may need 6-8 minutes. The goal is a tender-crisp texture—the vegetables should be easily pierced with a fork but still have a slight bite. They should also be bright and vibrant, not dull or mushy.
