How They Are Made: The Core Difference
The distinction between cold-pressed and refined oils begins with their extraction process. Cold-pressed oils, as the name suggests, are made by mechanically crushing seeds, nuts, or fruits at low temperatures—typically below 49°C. This traditional method,
known in India by terms like 'kachi ghani' or 'chekku', uses pressure to extract the oil without heat or chemical solvents. The process is gentle, preserving the natural essence of the source. Refined oils, conversely, undergo an intensive industrial process designed for high yield and longer shelf life. This method often involves high heat (sometimes over 200°C), chemical solvents like hexane to extract maximum oil, followed by bleaching to remove colour and deodorising to create a neutral taste and aroma. While this process makes the oil stable, it strips away many of the natural compounds present in the original seed.
The Nutritional Showdown
Because of their minimal processing, cold-pressed oils are nutritional powerhouses. They retain a high level of antioxidants, vitamins like Vitamin E, and beneficial fatty acids such as omega-3s. These components are known to support heart health and reduce inflammation. The natural compounds preserved in cold-pressed oils contribute to their vibrant colour and distinct flavour. Refining, on the other hand, significantly diminishes the oil's nutritional profile. The high heat and chemical treatments destroy most of the natural vitamins and antioxidants. What remains is a product with a neutral nutritional profile, often described as providing 'empty calories' without the added benefits of the bioactive compounds found in their cold-pressed counterparts. Some refining processes can also create unhealthy trans fats.
Heat, Smoke, and Cooking Applications
A crucial factor in choosing a cooking oil is its smoke point—the temperature at which it begins to smoke and break down. When an oil passes its smoke point, its nutritional value degrades and it can release harmful compounds. Refined oils generally have high smoke points (around 230°C), making them suitable for high-temperature cooking methods like deep-frying, searing, and stir-frying. Their neutral flavour also means they won't overpower the taste of your food. Cold-pressed oils have lower smoke points (often between 160-180°C). This makes them ideal for salad dressings, drizzling over finished dishes, or for low-to-medium heat cooking like gentle sautéing. Using them for high-heat cooking is not recommended as it can destroy their delicate nutrients and flavour.
Flavour, Aroma, and Shelf Life
One of the most noticeable differences is in flavour and aroma. Cold-pressed oils carry the distinct, robust taste of their source—think the pungency of mustard oil, the nuttiness of groundnut oil, or the fragrance of coconut oil. This can add a wonderful new dimension to your dishes. Refined oils are intentionally neutral. The bleaching and deodorising process strips them of any flavour or smell, making them versatile for baking and cooking where you don't want the oil to impart a taste. In terms of longevity, refined oils win. The very process that removes nutrients also removes impurities that can cause spoilage, giving them a much longer shelf life. Cold-pressed oils are more delicate and should be stored in a cool, dark place and used more quickly to prevent them from going rancid.
