Native to southern India, jackfruit, or 'kathal', is the world's largest tree-borne fruit. While ripe jackfruit is sweet and tastes like a mix of mango, banana, and pineapple, the young, unripe green jackfruit has a neutral flavour and a remarkable texture.
When cooked, its fibrous consistency is incredibly similar to shredded or pulled meat, making it a fantastic substitute for pork or chicken. Unlike many processed meat alternatives, jackfruit is a whole food, naturally low in calories and fat, and free from gluten and soy.

Creating delicious air-fried jackfruit at home is simple. Start with canned young green jackfruit packed in water or brine, not syrup. Drain and rinse the fruit thoroughly to remove the briny taste. You can boil it for about 15 minutes to soften it further, which makes shredding easier. Once shredded with a fork, it’s time for flavour. Jackfruit has a neutral taste, so it soaks up marinades and spices beautifully. For classic sliders, toss the shredded fruit in your favourite barbecue sauce, along with seasonings like smoked paprika, garlic powder, and a touch of cayenne for heat. Place the seasoned jackfruit in a pan that fits your air fryer (to prevent small pieces from falling through) and cook at around 200°C for 5-7 minutes, or until heated through and slightly crispy.
