Nilgiri: The Undiscovered Gem of Indian Tea
When you think of Indian tea, Assam and Darjeeling probably come to mind first. But nestled in the southern Blue Mountains (Nilgiris) is a tea region that produces some of the most aromatic and balanced teas in the world. Grown at high altitudes and harvested
year-round, Nilgiri tea is known for being exceptionally smooth, fragrant, and naturally sweet, with bright floral and fruity notes. Unlike bolder, maltier black teas, Nilgiri has very low astringency, meaning it's less likely to become bitter. This quality makes it particularly well-suited for iced tea, as it doesn't get cloudy or harsh when chilled—a major reason why it's a favorite for commercial iced tea producers.
Meet the Catechins: Tea’s Antioxidant Powerhouses
The secret to many of tea's health benefits lies in a group of powerful antioxidants called catechins. These plant-based compounds, a type of polyphenol, are celebrated for their ability to fight oxidative stress in the body by neutralizing unstable molecules called free radicals. The most famous of these is epigallocatechin gallate (EGCG), which has been extensively studied for its role in cellular health. Research has linked a diet rich in catechins to a wide range of benefits, including supporting cardiovascular health, improving metabolism, and protecting the brain. In short, these are the compounds you want to get as many of as possible from your daily cup.
The Problem with Hot Water
Brewing tea is all about extraction, but hot water can be a double-edged sword. While a near-boiling soak quickly pulls out flavor, aroma, and caffeine, it's not so gentle on the delicate catechins. High temperatures can cause these complex molecules to degrade, reducing their potency. Heat also extracts tannins and other compounds that contribute to bitterness and astringency at a much higher rate. One study on green tea infusions found that while epistructured catechins like EGCG were extracted quickly in the first few minutes of hot brewing, their levels could actually decrease with prolonged steeping at high temperatures. This means you can be inadvertently destroying some of the very compounds you’re drinking the tea for.
Cold Brewing’s Gentle, Selective Touch
Cold brewing changes the entire chemical equation. By steeping leaves in cold or room-temperature water for an extended period, you get a much more selective and gentle extraction. The headline claim that cold brewing is universally better at preserving all catechins is nuanced. Research shows that hot brewing is more effective at extracting the famous EGCG. However, cold brewing excels at extracting other important catechins like EGC and EC, sometimes at levels 130-150% higher than a hot brew. Furthermore, some studies suggest that in hot water, EGCG can actually inhibit the immune-supporting function of EGC; cold brewing avoids this by extracting less EGCG, allowing the EGC to work unimpeded. The result is a different—but powerfully beneficial—antioxidant profile, along with significantly lower bitterness and caffeine.
How to Cold Brew Nilgiri Tea Perfectly
Making your own superior cold brew is incredibly simple. You don’t need any special equipment, just a pitcher or a jar with a lid. For Nilgiri, its natural smoothness means you’re guaranteed a delicious result.
1. Get the Ratio Right: A good starting point is about 1.5 to 2 tablespoons of loose-leaf Nilgiri tea for every 32 ounces (1 liter) of water. You can adjust this to your taste.
2. Combine and Steep: Place the tea leaves directly in your pitcher or a large infuser. Fill with cold, filtered water, and give it a gentle stir to ensure all the leaves are saturated.
3. Refrigerate: Cover the container to protect it from other fridge odors and let it steep in the refrigerator for 8 to 12 hours. Overnight is perfect. Unlike hot tea, it's very forgiving and won't get bitter if you steep it a little longer.
4. Strain and Serve: Once steeping is complete, simply strain the leaves out. Your cold brew is ready to serve over ice. It will keep in the fridge for up to three days.
