A simple combination of crumbled paneer, sautéed onions, tomatoes, and minimal spices creates a flavourful dish that pairs well with toast or roti. Add a teaspoon of cumin seeds and let them sizzle. Add one finely chopped onion and sauté for about two to three minutes until it becomes translucent. 2. Fibre-Rich Oats Chilla
An Oats Chilla is a savoury pancake that offers a healthy twist on a breakfast classic. Made from oats, these chillas are packed with dietary fibre, particularly a type called beta-glucan, which is known for promoting heart health and keeping you full. By adding vegetables and a touch of gram flour (besan), you can easily boost the protein and vitamin content, making it a well-rounded meal. For a quick batter, take one cup of instant or rolled oats and grind them into a coarse powder. Transfer to a bowl and add two tablespoons of besan and two tablespoons of semolina (sooji). Gradually add water while mixing to form a smooth, pancake-like batter. Let it rest for just five minutes for the oats to soften. Heat a non-stick pan, pour a ladleful of batter, and spread it into a circle. Cook for two to three minutes on each side until golden brown. Serve hot with chutney or yoghurt for a delicious and satisfying breakfast.

This 'instant' version skips any lengthy soaking time, making it a true 10-minute wonder for the busiest of days. Adding peanuts and a squeeze of lemon juice not only enhances the flavour but also boosts the iron and protein content. To prepare instant poha, take one cup of thick poha in a strainer and rinse it gently under running water for about 30 seconds until it softens but doesn't turn mushy. Let it drain. Heat a tablespoon of oil in a pan and add a teaspoon of mustard seeds. Once they splutter, add a handful of peanuts, a few curry leaves, and chopped green chillies. Sauté for a minute before adding one finely chopped onion and cooking until it softens. Add a pinch of turmeric powder, then add the rinsed poha, salt, and a teaspoon of sugar. Mix gently and cook for two minutes. Turn off the heat, garnish with fresh coriander, and finish with a squeeze of lemon juice before serving.
