tart flavour and, according to a growing body of research, its potential health benefits. The headline claim hinges on acetic acid’s interaction with starchy foods. When you consume carbohydrates, your body gets to work breaking them down into simple sugars, like glucose, which enter your bloodstream. The speed of this process can cause blood sugar to rise quickly. Studies suggest acetic acid intervenes in this process in a few key ways.
Slowing the Sugar Rush
The primary mechanism appears to be acetic acid’s ability to temporarily inhibit some of the enzymes that digest starch. By slowing down the breakdown of complex carbohydrates in your stomach, glucose is released into the bloodstream more gradually. This helps to blunt the sharp spike in blood sugar that can follow a high-carb meal. Some studies have shown this effect can reduce the post-meal glucose surge by around 20%. Another proposed mechanism is that vinegar may slow the rate at which your stomach empties its contents into the small intestine, further drawing out the absorption process. How to Use Vinegar Effectively

While promising, it's crucial to approach this with realistic expectations. Vinegar is not a magic cure for high blood sugar or a replacement for diabetes medication. The effect appears most significant with high-glycemic, starchy meals and may be less noticeable with high-fibre meals that already slow digestion. Furthermore, there are potential downsides. The acidity of vinegar can damage tooth enamel over time, which is why diluting it is so important. It can also cause digestive discomfort for some individuals.
