Cold steeping minimizes this, allowing the delicate, true flavours of the kokum and jamun to shine through. Recipe: Cold-Steeped Kokum Refresher
This simple mocktail is tangy, lightly spiced, and incredibly refreshing.Ingredients:- 8-10 dried kokum petals- 4 cups cold water- 2 tablespoons jaggery powder or to taste- 1/2 teaspoon roasted cumin powder- A pinch of black salt- Fresh mint leaves for garnishMethod:1. Rinse the dried kokum petals. Place them in a large glass jar with 4 cups of cold water.2. Cover the jar and let it steep in the refrigerator for at least 8 hours, or overnight.3. The next day, the water will have turned a beautiful ruby red. Strain the liquid, gently pressing the kokum petals to release all their juice.4. Stir in the jaggery powder until it dissolves completely. Add the roasted cumin powder and black salt, mixing well.5. To serve, pour into glasses filled with ice and garnish with fresh mint leaves. In a blender, combine the deseeded jamun pulp, mint leaves, lemon juice, and honey. Blend until you have a smooth puree.2. Transfer this puree into a large glass jar. Pour in the 4 cups of cold water and stir well to combine.3. Let the mixture steep in the refrigerator for 2-3 hours to allow the flavours to meld together.4.
