A great dressing ties everything together. A simple lemon-tahini sauce is a classic choice. Whisk together tahini, fresh lemon juice, a little water to thin it out, and finely minced garlic. Another easy option is a creamy yogurt dressing made by combining Greek yogurt with fresh dill, lemon juice, and a touch of honey. For extra flavour and texture, finish your bowl with toppings like shelled pistachios, toasted almonds, or sunflower seeds. Fresh herbs such as mint, parsley, or cilantro also add a burst of freshness.
The Meal-Prep Strategy for Success
The key for busy professionals is meal prep. You don’t need to assemble the entire bowl ahead of time. Instead, prepare the components separately for quick assembly throughout the week. Over the weekend, cook a large batch of lentils and store them in an airtight container in the refrigerator. Chop your raw vegetables and roast your heartier ones. You can also mix one or two dressings and keep them in jars. When dinner time arrives, simply grab a bowl, add a scoop of lentils, top with your chosen vegetables and protein, and drizzle with dressing.
