Don’t worry, we’re not talking about garden foliage. In the world of beverages, a shrub is a non-alcoholic syrup made from a simple combination of fruit, sugar, and vinegar. Historically, it was a method used for preserving fruit before the age of refrigeration.
The process involves macerating fruit with sugar to draw out its juices, and then adding vinegar to create a tangy, sweet, and complex concentrate. This resulting syrup, when mixed with sparkling water or soda, creates a drink with a depth of flavour that most commercial sodas lack. It’s a tradition that dates back centuries but is now being rediscovered by home mixologists and health-conscious individuals alike.
The Low-Sugar Advantage
One of the biggest appeals of shrubs is the ability to control the sugar content. While the process requires sugar to extract flavour from the fruit, the final drink is significantly diluted. Typically, you only need one or two tablespoons of the shrub syrup for a full glass of soda water. This makes it a far healthier choice compared to commercial soft drinks, which can contain alarming amounts of sugar in a single serving. Furthermore, by making it at home, you can experiment with reducing the sugar in the initial recipe or using natural sweeteners like honey or maple syrup. Combine Fruit and Sugar: Start with a 1:1 ratio of fruit and sugar by weight. For example, use 250 grams of chopped fruit (like strawberries, mangoes, or pomegranates) and 250 grams of sugar. Combine them in a clean glass jar, mix well, cover, and let it sit in the refrigerator. 2. Macerate: Let the mixture sit for 1 to 3 days. During this time, the sugar will draw the juice out of the fruit, creating a rich syrup. You can give the jar a shake once a day. 3. Strain and Add Vinegar: After a couple of days, you’ll see a significant amount of colourful syrup in the jar. Strain the mixture through a fine-mesh sieve, pressing the fruit to extract all the liquid. Discard the solids. Now, mix the syrup with vinegar. A 1:1 ratio of syrup to vinegar is a good starting point. Apple cider vinegar is a popular choice, but red wine or white vinegar also work well. 4. Store: Pour your finished shrub into a clean bottle and store it in the refrigerator. It's recommended to let it sit for another day or two for the flavours to meld, but it can be used immediately. It should last for several weeks.
Crafting the Perfect Shrub Soda
Once your shrub is ready, the fun begins. Making a shrub soda is as easy as it gets. Fill a glass with ice. Add 1 to 2 tablespoons (about 15-30 ml) of your fruit shrub syrup. Top the glass with about 180-240 ml of chilled club soda or sparkling water. Stir gently to combine. You can adjust the ratio of shrub-to-soda based on your preference for sweetness and tanginess. Garnish with a slice of lime, a sprig of mint, or some of the fruit you used in the shrub for an elegant touch.
