How They Are Made: A Tale of Two Processes
The fundamental difference between cold-pressed and refined oils lies in their extraction process. Cold-pressed oils are made using a simple, mechanical method. Seeds or nuts are crushed and pressed, usually at a temperature below 49°C, to extract the oil.
This gentle process, reminiscent of traditional methods using a 'ghani' or wooden press, helps the oil retain its natural flavour, aroma, and nutritional compounds. Refined oils, on the other hand, are products of a heavy industrial process. The journey often starts with high heat and may involve chemical solvents like hexane to extract every last drop of oil from the seed cake. Afterwards, the crude oil undergoes several more stages—neutralising, bleaching with activated clay, and deodorising at very high temperatures—to remove impurities, colour, and odour. This results in a neutral-tasting oil with a much longer shelf life.
The Nutritional Showdown: Purity vs. Stability
Because they are minimally processed, cold-pressed oils are nutritional powerhouses. They retain a high concentration of antioxidants, vitamins (like Vitamin E), and healthy fats such as monounsaturated and polyunsaturated fatty acids. These components are crucial for heart health, reducing inflammation, and overall well-being. The natural flavours are also preserved, which can enhance the taste of your food. Refining, however, strips away many of these beneficial nutrients. The high heat and chemical treatments destroy most of the vitamins and antioxidants. While the resulting oil is more stable and less prone to spoilage, it is nutritionally inferior to its cold-pressed counterpart. What you gain in shelf life and neutrality, you lose in natural goodness.
The All-Important Smoke Point
The smoke point is the temperature at which an oil begins to break down and produce visible smoke. Heating an oil past this point does more than just create an unpleasant burnt taste; it also degrades the oil and releases harmful compounds called free radicals. These substances can cause cellular damage and contribute to health problems over time. Therefore, matching the oil's smoke point to your cooking method is essential for both health and flavour.
Which Oil Handles the Heat?
This is where refined oils have a distinct advantage. The refining process removes the free fatty acids and other impurities that cause unrefined oils to smoke at lower temperatures. As a result, refined oils generally have a much higher smoke point, often upwards of 230°C. For example, refined groundnut or sunflower oil is stable at high temperatures. Cold-pressed oils, containing more natural particles, have lower smoke points. For instance, cold-pressed groundnut oil smokes at around 160°C, and cold-pressed sesame and coconut oils are in a similar range. This makes them less suitable for high-heat applications like deep-frying, where temperatures can easily exceed this limit.
The Right Oil for the Right Job
So, which oil should you stock in your pantry? The answer is likely both. It’s not about one being universally 'good' and the other 'bad', but about smart usage. Use cold-pressed oils for dishes where you want to preserve their nutritional benefits and distinct flavours. They are perfect for salad dressings, drizzling over finished dishes, and for low-to-medium heat cooking like light sautéing. Reserve refined oils for high-heat cooking methods common in Indian cuisine, such as deep-frying samosas and pakoras, or high-heat stir-fries. Their neutral flavour won't interfere with the spices, and their high smoke point ensures the oil remains stable. Ghee, with its high smoke point of around 250°C, is another excellent traditional option for high-heat cooking.
