The love for street food in India is undeniable, but traditional preparation methods often involve deep-frying and refined ingredients. This delicious makeover focuses on two key changes: using an air fryer and swapping in millets. Air frying can reduce
the fat content in foods by a significant margin compared to deep-frying. It works by circulating hot air to create a crispy exterior with minimal oil, giving you that satisfying crunch without the extra grease. Meanwhile, millets are nutritional powerhouses making a major comeback. Compared to the puffed rice traditionally used in bhel, millets offer significantly more fibre, protein, and essential minerals like iron and magnesium. They also have a lower glycemic index, which helps in managing blood sugar levels and keeps you feeling full for longer. These simple swaps mean you can indulge in your favourite flavours while making a positive choice for your health.
Recipe 1: Air-Fried Paneer Tikka
This recipe delivers the smoky, charred flavour of traditional paneer tikka with a fraction of the oil. The paneer remains soft on the inside with a perfectly crisp coating. Ingredients: - 250g paneer, cut into 1.5-inch cubes - 1 large onion, cut into square chunks - 1 large capsicum (bell pepper), cut into square chunks - 1 cup thick curd (Greek yogurt) - 1 tbsp ginger-garlic paste - 1 tbsp gram flour (besan), lightly roasted - 1 tsp turmeric powder - 1 tsp red chilli powder (adjust to taste) - 1 tsp garam masala - 1 tsp coriander powder - 1 tsp kasuri methi (dried fenugreek leaves), crushed - Juice of half a lemon - 1 tsp mustard oil (optional, for authentic flavour) - Salt to taste Instructions: 1. In a large bowl, whisk together the thick curd, ginger-garlic paste, roasted besan, and all the powdered spices. Add the lemon juice, salt, and mustard oil, if using. Mix until you have a smooth, thick marinade. 2. Gently add the paneer cubes, onion, and capsicum chunks to the marinade. Mix well to ensure everything is evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to a few hours for deeper flavour. 3. Preheat your air fryer to 180°C (360°F) for about 5 minutes. 4. Arrange the marinated paneer, onion, and capsicum in a single layer in the air fryer basket. You can skewer them or place them directly in the basket. Avoid overcrowding to ensure even cooking. 5. Air fry for 8-10 minutes. At the halfway point, gently shake the basket or flip the pieces to ensure they cook evenly on all sides. Continue air frying until the edges are golden brown and slightly charred. 6. Once cooked, remove from the basket, sprinkle with chaat masala, and serve hot with mint chutney.
Recipe 2: Wholesome Millet Bhel
A crunchy, tangy, and incredibly satisfying snack, this bhel uses a mix of millet flakes instead of puffed rice for a major nutritional upgrade. Ingredients: - 2 cups mixed millet flakes (like foxtail, ragi, or a pre-made mix) - 1 medium onion, finely chopped - 1 medium tomato, finely chopped - 1 boiled potato, peeled and diced small - 1/4 cup roasted peanuts - 2 tbsp fresh coriander, chopped - 1 green chilli, finely chopped (optional) - 2-3 tbsp green chutney - 2-3 tbsp tamarind-date chutney (sweet chutney) - 1 tsp chaat masala - Juice of one lime - Nylon sev, for garnish - Pomegranate seeds, for garnish (optional) Instructions: 1. In a large mixing bowl, combine the mixed millet flakes, chopped onion, tomato, and boiled potato. 2. Add the roasted peanuts, green chilli, and a generous sprinkle of chaat masala. Toss everything together gently. 3. Drizzle the green chutney and the sweet tamarind-date chutney over the mixture. The amount can be adjusted based on how spicy or sweet you prefer your bhel. 4. Squeeze fresh lime juice over the top and add the chopped coriander leaves. 5. Give everything a final, quick toss. It's important to mix and serve immediately to prevent the millet flakes from becoming soggy. 6. Garnish with a generous amount of nylon sev and some pomegranate seeds for a pop of colour and sweetness. Serve immediately and enjoy the crunchy, healthy goodness.
