The Golden Rules for Air-Frying Fritters
Transitioning your favourite fritter recipes from the deep fryer to the air fryer requires a few key adjustments. First, the batter must be thicker than what you would use for deep-frying; a runny batter will not work. Many recipes recommend adding rice
flour or even a pinch of baking soda for extra crispiness. Don't overcrowd the basket, as this traps steam and makes the fritters soft instead of crunchy. It is crucial to preheat your air fryer and to use a light spray of oil on both the basket and the fritters themselves. This small amount of oil is what helps achieve that desirable golden-brown colour and crispy texture.
Classic Onion Pakora, Reimagined
Onion pakoras, or bhajis, are a rainy-day staple, and they adapt beautifully to the air fryer. The secret lies in a thick batter that clings to the onion slices. Combine gram flour (besan), rice flour, and your preferred spices. Toss the sliced onions in the dry mixture first before gradually adding just enough water to create a sticky, firm batter. Arrange the pakoras in a single layer in the preheated air fryer basket, ensuring they don't touch. Air fry at around 180-190°C (350-375°F), flipping them halfway through. A common technique is to air fry for about 5 minutes to let them set, then spray with oil, flip, and continue cooking for another 5-8 minutes until golden and crisp.
Crispy Medu Vada, Guilt-Free
Medu vada presents a unique challenge due to its wet, sticky batter made from soaked urad dal. Success in the air fryer is possible, but don't expect the exact same appearance as the deep-fried version, though the texture can be spot-on. The key is a very thick, fluffy batter, ground with minimal, cold water. Beating the batter well to aerate it is crucial for a soft interior. One effective hack is to use a greased muffin tin or silicone moulds to help the vadas hold their donut shape. Alternatively, you can shape them by hand on greased parchment paper. Brush them with oil and air fry at around 170-180°C (340-360°F), flipping carefully once they are firm enough to handle, until they are crisp and cooked through.
Batata Vada and Samosa Success
The beloved components of Mumbai street food, batata vada and samosa, can also get a healthy makeover. For batata vada, the potato filling remains the same, but the gram flour coating should be thick. Once coated, spray the vadas with oil and place them in the air fryer. For samosas, the process is even more straightforward. After filling and sealing your pastry, simply brush or spray the exterior with a light layer of oil before air-frying. This will give you a flaky, golden crust without the need for deep-frying. For both, air fry until the exterior is golden brown and crisp, usually flipping them halfway through the cooking time.
Beyond the Basics: Paneer, Corn, and More
The possibilities don't stop there. Paneer pakoras work wonderfully, though you must ensure the batter is thick to prevent the cheese from drying out. Corn pakoras, made with sweet corn kernels in a spiced gram flour batter, also become delightfully crispy in the air fryer. You can experiment with a wide variety of vegetables, from spinach and potato matchsticks to cauliflower florets. The general principles remain the same: use a thick batter, don't overcrowd the basket, use a little oil, and be prepared to adjust cooking times based on your specific air fryer model and the ingredients you're using.
