Cold-pressed oils are extracted from seeds or nuts using a mechanical press without adding heat. This traditional method, sometimes called wood-pressing, involves crushing the raw materials at a low temperature to force the oil out. Because there's no
high heat or chemical intervention, the oil retains its original nutrients, antioxidants, vitamins, and minerals. This gentle process also preserves the natural flavour and aroma of the seed, which is why cold-pressed groundnut oil smells nutty and cold-pressed coconut oil has a distinct tropical fragrance. Common examples popular in Indian households include cold-pressed mustard, coconut, sesame, and groundnut oils.
The Industrial Process: What Are Refined Oils?
Refined oils are produced on a large, industrial scale designed for maximum yield and shelf life. The process often starts with exposing the seeds to high heat before extracting the oil using chemical solvents like hexane. What follows is a series of treatments including degumming, neutralizing, bleaching, and deodorizing. These steps remove impurities, natural gums, and free fatty acids, resulting in a bland, odourless oil with a uniform colour and a much longer shelf life. However, this intensive processing also strips away many of the beneficial nutrients, including vitamins and antioxidants.
Nutrition: The Biggest Difference
The primary advantage of cold-pressed oils is their superior nutritional profile. Since they are minimally processed, they are rich in essential fatty acids, antioxidants like polyphenols, and vitamins such as Vitamin E, which help combat inflammation and support heart health. Refined oils, on the other hand, lose a significant portion of these protective compounds during the refining process. While they still provide energy in the form of fats, they are often considered to deliver 'empty calories' without the added health benefits found in their cold-pressed counterparts.
The Smoke Point Debate
Smoke point is the temperature at which an oil begins to smoke and break down, potentially releasing harmful compounds. This is where refined oils have a distinct advantage. The refining process removes impurities that would otherwise cause the oil to smoke, giving them a higher smoke point. This makes them more stable and suitable for high-temperature cooking methods like deep-frying. Cold-pressed oils generally have lower smoke points because they retain more of their natural components. Heating a cold-pressed oil past its smoke point can not only destroy its delicate nutrients but also create a bitter taste. However, for most daily Indian cooking like making tadka, sautéing, or shallow frying, many cold-pressed oils like groundnut and mustard oil perform well within their smoke point limits.
Choosing the Right Oil for the Right Job
The best approach isn't to label one oil 'good' and the other 'bad,' but to use them smartly. Cold-pressed oils, with their rich flavours and nutrients, are ideal for applications where they won't be exposed to extreme heat. Think salad dressings, dips, marinades, or drizzling over a finished dal or soup. For everyday Indian cooking at low to medium temperatures, cold-pressed mustard, groundnut, and coconut oils are excellent choices. When you need to deep-fry samosas or other snacks that require sustained high heat, a refined oil is a more practical and stable choice. Its neutral flavour also ensures it won't interfere with the taste of your food.
