The Perfect Midday Meal
A great lunch needs to tick a few boxes: it should be quick to prepare, satisfying enough to power you through the afternoon, and, most importantly, delicious. The grilled paneer and capsicum sandwich does all three. This isn't just a simple sandwich;
it's a flavour-packed experience. The combination of soft, protein-rich paneer and sweet, crunchy capsicum, all infused with a smoky char, elevates the humble sandwich into something special. It brings the taste of a restaurant-style paneer tikka into your kitchen, ready in a fraction of the time.
Gathering Your Core Ingredients
The beauty of this sandwich lies in its simplicity. For the filling, you'll need firm paneer, which holds its shape well when grilled. A mix of colourful capsicums (bell peppers) not only adds visual appeal but also layers of flavour. The marinade is key: a base of thick yoghurt, ginger-garlic paste, and a blend of classic Indian spices like cumin powder, coriander powder, garam masala, and a pinch of red chilli powder for heat. For the bread, choose sturdy slices that can handle the grilling process, such as sourdough, multigrain, or panini bread. Finally, have some butter for grilling and green chutney for a fresh, tangy spread.
The Secret to a Smoky Flavour
Achieving an authentic smoky taste at home is the trick that elevates this sandwich. The marinade is your first step. Many recipes suggest using a mix of yoghurt and spices, including tandoori masala, which has a naturally smoky profile. For a deeper flavour, you can employ a technique called the 'dhungar' method. After cooking your marinated paneer and vegetables, place them in a large bowl. Put a smaller steel bowl in the centre, add a piece of red-hot charcoal to it, and pour a little ghee or oil over the charcoal. Immediately cover the large bowl and let the smoke infuse the filling for a few minutes. This simple step imparts a genuine tandoori-like smokiness. Alternatively, grilling the capsicum directly over a gas flame until the skin blisters and chars can also add a lovely smoky dimension.
Grilling and Assembly
Start by cutting your paneer into cubes or slices and marinating it along with the chopped capsicum for at least 15-20 minutes. You can cook the filling in a hot pan or on a grill pan until the paneer is golden brown and the capsicum is slightly charred but still has some crunch. To assemble the sandwich, lightly butter the outer sides of your bread slices. On the inside, spread a generous layer of green chutney. Pile on the smoky paneer and capsicum filling. You can also add a slice of cheese for extra indulgence. Place the assembled sandwich in a preheated sandwich press or on a tawa (griddle) and grill until both sides are golden brown and crisp.
Customise Your Creation
This recipe is a fantastic starting point for your own creations. Feel free to add other vegetables to the filling, such as thinly sliced onions, tomatoes, or even boiled corn. For a different flavour profile, you can swap the green chutney for a tangy tamarind sauce or a creamy sriracha mayonnaise. If you don't have paneer, firm tofu is an excellent substitute that works well with the same marinade and grilling technique. Don't be afraid to experiment with the spice blend; a dash of chaat masala can add a delightful tanginess to the final dish.
