Ingredients for the Marinade: - 1/2 cup thick or hung curd (Greek yogurt works well) - 1 tbsp roasted gram flour (besan) - 1 tsp ginger-garlic paste - 1 tsp Kashmiri red chilli powder (for colour) - 1/2 tsp garam masala - 1 tsp coriander powder - 1 tsp chaat masala - 1/2 tsp kasuri methi (dried fenugreek leaves), crushed - 1 tbsp mustard oil or any neutral oil - Salt to taste Main Ingredients: - 250g paneer, cut into 1-inch cubes - 1 onion, cut into 1-inch cubes - 1 capsicum (green bell pepper), cut into 1-inch cubes Instructions: 1. In a mixing bowl, whisk together all the marinade ingredients until smooth. 2. Add the paneer, onion, and capsicum cubes to the marinade. Gently toss until everything is well-coated. Let it marinate for at least 30 minutes in the refrigerator. 3. Preheat your air fryer to 200°C (400°F) for about 5 minutes. 4. Arrange the marinated paneer and vegetable cubes in a single layer in the air fryer basket. Avoid overcrowding the basket. 5. Air fry for 7-8 minutes, then gently flip the pieces. Continue to air fry for another 5-6 minutes, or until the edges are nicely charred and cooked through. 6. Serve hot, sprinkled with extra chaat masala and a squeeze of lemon juice.

If your millet flakes are very hard, you can lightly toast them in a dry pan for a few minutes until they are crisp. Let them cool completely. 2. In a large mixing bowl, combine the millet flakes, chopped onion, tomato, boiled potato, and roasted peanuts. 3. Add the chaat masala, green chilli, and salt. Toss everything together gently. 4. Just before serving, drizzle the tamarind and green chutneys over the mixture. Add the lemon juice and chopped coriander. 5. Mix well until everything is evenly coated. 6. Garnish with a sprinkle of sev if desired and serve immediately to enjoy the crunch.
