Vegetable Pulao is a fragrant and comforting one-pot rice dish that’s a staple in many Indian homes. This version is designed for speed, using a pressure cooker to get a fluffy, flavourful meal on the table fast. Soaking the rice for about 15-20 minutes
while you prep your vegetables is a key step to ensure the grains cook up long and separate, not mushy. This recipe is incredibly versatile, so feel free to use whatever vegetables you have on hand. Ingredients: 1 cup Basmati rice, rinsed and soaked 1 tbsp ghee or oil 1 tsp cumin seeds A few whole spices (1 bay leaf, 2 cloves, 1 small cinnamon stick) 1 small onion, thinly sliced 1 tsp ginger-garlic paste 1.5 cups mixed vegetables (carrots, peas, beans, corn) ¼ tsp turmeric powder ½ tsp garam masala Salt to taste 1.5 to 2 cups water Fresh coriander for garnish Instructions: 1. Heat ghee or oil in a pressure cooker on medium heat. Add the cumin seeds and whole spices, letting them sizzle for a few seconds until fragrant. 2. Add the sliced onions and sauté until they turn translucent. 3. Stir in the ginger-garlic paste and cook for about 30 seconds until the raw smell is gone. 4. Add all your chopped vegetables, turmeric powder, and garam masala. Sauté for another minute. 5. Drain the soaked rice completely and add it to the cooker. Gently mix everything together. 6. Pour in the water, add salt, and stir well. Taste the water; it should be slightly salty. 7. Secure the lid of the pressure cooker. Cook on high flame for 2 whistles. Let the pressure release naturally before opening. Fluff the rice gently with a fork, garnish with fresh coriander, and serve hot with a side of raita or plain curd.

For a lighter, protein-packed alternative, Quinoa Khichdi is a fantastic choice. It replaces traditional rice with quinoa, a nutrient-dense seed that cooks quickly. This modern twist on a classic comfort food is just as easy to make and is perfect for a healthy, guilt-free meal. Rinsing the quinoa thoroughly before cooking is important to remove its natural bitter coating. Ingredients: ½ cup quinoa, rinsed well ½ cup moong dal (yellow split lentils), rinsed 1 tbsp ghee or oil 1 tsp cumin seeds A pinch of asafoetida (hing) 1 small onion, finely chopped 1 small tomato, chopped 1 cup mixed vegetables (carrots, peas, beans) ½ tsp turmeric powder Salt to taste 3 cups water Juice of half a lemon * Fresh coriander for garnish Instructions: 1. Heat ghee or oil in a pressure cooker. Add the cumin seeds and asafoetida. 2. Once the seeds splutter, add the chopped onion and sauté until soft. 3. Add the chopped tomato and mixed vegetables, cooking for another minute. 4. Stir in the rinsed quinoa and moong dal, followed by the turmeric powder and salt. 5. Pour in the water and give everything a good mix. 6. Close the cooker and cook on high flame for 3 whistles, or about 8-10 minutes. Let the pressure release naturally. 7. Open the cooker, squeeze in the lemon juice, and stir gently. Garnish with fresh coriander. This khichdi has a naturally softer, porridge-like consistency. Serve it hot, perhaps with a dollop of ghee on top.
