A Taste of the Mediterranean
Transport yourself to the sunny coasts of Greece and Italy with a refreshing Mediterranean quinoa salad. This preparation is all about fresh, crisp ingredients and a zesty dressing. Cook your quinoa and let it cool completely. Then, toss it with a colourful
mix of diced cucumber, halved cherry tomatoes, chopped red onion, and briny Kalamata olives. For vegetables, bell peppers add a sweet crunch. Herbs are key here; a generous amount of freshly chopped parsley and mint will elevate the flavours. Crumble some feta cheese over the top for a creamy, salty finish. The dressing is simple but effective: a mix of good quality olive oil, fresh lemon juice, and a pinch of salt and pepper brings everything together. It's a perfect light lunch or a vibrant side dish.
An Indian-Inspired Tadka Quinoa
Give quinoa a familiar and comforting Indian twist. This version draws inspiration from the classic 'pulao' or 'upma', making it a wholesome one-pot meal. Start by cooking quinoa, perhaps in vegetable broth to infuse it with flavour from the start. In a separate pan, heat some oil or ghee and temper whole spices like cumin seeds, cloves, and a small piece of cinnamon. Sauté chopped onions until they turn translucent, then add ginger-garlic paste. Now, it's time for the vegetables. Diced carrots, green beans, peas, and even small florets of cauliflower work wonderfully. Add powdered spices like turmeric, coriander, and a touch of chilli powder for warmth. Once the vegetables are tender-crisp, fold in the cooked quinoa. Finish with a squeeze of lemon juice and a garnish of fresh, chopped cilantro. This 'masala' quinoa is flavourful enough to be a main course, perhaps served with a side of cooling raita.
The Vibrant Peruvian Stir-Fry
As quinoa originates from the Andean region of South America, it feels right to prepare it with Peruvian flair. A stir-fry is a quick and delicious way to combine quinoa with a host of vegetables. In a large skillet or wok, heat a neutral oil and add aromatics like minced garlic. Sauté a medley of colourful vegetables like sliced bell peppers, zucchini, carrots, and celery until they are crisp-tender. You can also add corn and black beans for extra texture and protein. The sauce can be a simple mix of soy sauce (or tamari), a touch of sesame oil, and maybe some chilli-garlic sauce for a bit of heat. Once the vegetables are cooked, add the cooked quinoa to the pan and toss everything together until the quinoa is heated through and well-coated in the sauce. Garnish with fresh cilantro or chopped mint.
A Zesty Asian-Style Bowl
Asian-inspired quinoa bowls are all about the balance of sweet, salty, sour, and umami flavours. The star of this dish is often the dressing. A classic option is a creamy peanut sauce made from peanut butter, soy sauce, lime juice, a hint of maple syrup or honey for sweetness, and minced ginger. For the bowl itself, start with a bed of fluffy quinoa. Top it with a variety of fresh and cooked vegetables. Shredded cabbage and carrots provide a crunchy base, while blanched broccoli, edamame, and baby bok choy add substance and nutrients. Fresh herbs like cilantro and sliced scallions (green onions) are essential for a bright, fresh finish. You can also add protein like crispy baked tofu. Drizzle the dressing generously over the top and garnish with sesame seeds for a final touch of flavour and texture.
One-Pot Spanish Flavours
For a hearty and flavourful meal with minimal cleanup, a one-pot Spanish-style quinoa is an excellent choice. This method involves cooking the quinoa directly with the vegetables and spices, allowing all the flavours to meld beautifully. In a single pot, sauté chopped onion and garlic with Spanish-style spices like smoked paprika, cumin, and oregano. Add rinsed quinoa, a can of diced tomatoes with their juices, vegetable broth, and chickpeas. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer until the quinoa is soft and has absorbed most of the liquid. Towards the end of the cooking time, stir in drained artichoke hearts. A generous squeeze of fresh lemon juice and a scattering of fresh parsley just before serving will brighten up the entire dish, making it a satisfying and complete vegan meal.
