India's 'Hidden Hunger' Problem
Beneath the surface of a nation that has achieved food security in terms of calories, a silent epidemic persists. It's called 'hidden hunger', or micronutrient deficiency. This isn't about empty stomachs, but about diets lacking essential vitamins and
minerals like iron, iodine, zinc, and Vitamin A, which are vital for physical growth, cognitive development, and immune function. The scale of the problem is staggering. According to multiple national surveys, a significant portion of the population, especially women and children, suffers from deficiencies. For instance, over half of women and children are anaemic, largely due to iron deficiency. Zinc and Vitamin A deficiencies also remain prevalent, impacting millions and contributing to health issues that can last a lifetime. This widespread issue persists despite government supplementation programs that have been active for decades, indicating that the root causes are deep and complex.
The Food Variety Paradox
The intuitive solution to hidden hunger is to diversify diets. The logic is simple: eating a wider range of foods should provide a wider range of nutrients. However, recent evidence shows this isn't a guaranteed fix. The issue lies in the gap between dietary diversity and nutrient adequacy. A person might eat several different food items, but if those items are predominantly refined cereals, sugary snacks, and oils, the diet is diverse yet nutritionally poor. Indian diets, even in wealthier households, are often heavily based on cereals like rice and wheat, which provide energy but lack a sufficient spread of micronutrients. Furthermore, the actual nutrient content of the food available can be low due to factors like soil health and modern agricultural practices that prioritize yield over nutritional value. As a result, even a varied plate may not deliver the required levels of vital micronutrients.
Affordability and Access Barriers
For a vast number of Indians, a truly nutrient-rich diet is simply unaffordable. More than 75% of the population cannot afford a diet that meets the recommended diversity and nutrient levels. Nutrient-dense foods like fruits, vegetables, pulses, and nuts are often more expensive and less accessible than calorie-dense staples. This economic barrier is a primary driver of dietary monotony, forcing families to rely on what is cheap and filling rather than what is nutritious. Moreover, there are significant regional and infrastructural disparities. Urban centres may offer more variety, but rural households often depend on what is locally grown and seasonally available, which can be very limited. Lack of awareness about what constitutes a balanced diet and poor sanitation, which can lead to infections that prevent nutrient absorption, further compound the problem.
Smarter Solutions: Fortification and Biofortification
Since dietary diversity alone isn't closing the gap, India is turning to more direct and scalable strategies. Two of the most promising are food fortification and biofortification. Food fortification involves adding essential micronutrients to staple foods that are widely consumed, like salt (iodine), milk (Vitamins A and D), edible oils, and rice (iron and folic acid). This approach is cost-effective and requires no change in people's eating habits, making it a powerful tool to deliver nutrients to large populations. Biofortification is an agricultural approach where scientists breed crops to be naturally richer in nutrients. The Indian Council of Agricultural Research (ICAR) has been at the forefront, developing and releasing over 100 varieties of nutrient-rich crops, including zinc-rich wheat and iron-rich bajra. These crops deliver better nutrition directly from the farm, offering a sustainable, food-based solution to fighting hidden hunger.
