The Classic Quick Paneer Bhurji
Paneer Bhurji, a scramble of Indian cottage cheese, is a breakfast champion for a reason. It's flavourful, satisfying, and incredibly quick to make. For a 10-minute version, start by heating a little oil in a pan and sizzling some cumin seeds. Add finely
chopped onions and green chillies, sautéing for a couple of minutes until the onions soften. Add chopped tomatoes and cook for another minute before adding your spices like turmeric, red chilli powder, and a pinch of garam masala. Finally, add the crumbled paneer, mix everything well, and cook for just two to three minutes until heated through. Garnish with fresh coriander and serve hot with toast or a roti.
Speedy Savoury Oats Chilla
Oats Chilla, or savoury pancake, is a fantastic way to get a dose of fibre and protein. The instant version requires no grinding or soaking. In a bowl, mix quick-cooking oats with besan (gram flour), which acts as a binder and adds protein. Add finely chopped vegetables like onions, capsicum, and carrots, along with spices such as turmeric, cumin powder, and red chilli powder. Whisk in water to form a smooth, pourable batter. Let it rest for a few minutes if you have time. Heat a non-stick tawa or pan, pour a ladleful of batter, spread it into a circle, and cook on both sides until golden brown. It’s a complete, balanced meal ready in minutes.
Instant Sprouts and Veggie Salad
A sprouts salad is arguably the quickest and most nutrient-dense breakfast you can assemble. It's a no-cook recipe packed with protein, vitamins, and crunch. In a large bowl, combine a cup of moong bean sprouts with finely diced vegetables like cucumber, tomatoes, and onions. For flavour, add a simple dressing of lemon juice, a pinch of chaat masala, and black salt (kala namak). Toss everything together gently. You can also add grated carrots or chopped fresh coriander for extra freshness. If you have concerns about eating raw sprouts, you can quickly blanch them by pouring boiling water over them and draining after a couple of minutes.
The 5-Minute Besan Chilla
Even faster than an oats chilla is the classic Besan Chilla. Made purely from besan (gram flour), this pancake is naturally gluten-free and high in protein. To prepare the batter, simply whisk besan with water until you have a smooth, lump-free consistency. Add salt, turmeric, ajwain (carom seeds) for digestion, and finely chopped onions and green chillies. Pour the batter onto a hot, greased pan and spread it thin. Drizzle a little oil around the edges and cook for a few minutes per side until golden and cooked through. It’s a simple, timeless recipe that never fails on a busy morning.
The No-Cook Sattu Protein Shake
When you have absolutely no time to cook, a sattu drink is your saviour. Sattu, or roasted gram flour, is a traditional Indian superfood renowned for its high protein content and cooling properties. To make a simple, savoury shake, just mix a few tablespoons of sattu powder in a glass of chilled water or buttermilk. Add a pinch of black salt, roasted cumin powder, and a squeeze of lemon juice. Stir well until there are no lumps, and your instant protein shake is ready. For a sweet version, you can blend sattu with milk, a banana, and a bit of jaggery or honey.
Greek Yogurt with Nuts and Seeds
For a breakfast that requires zero cooking and minimal prep, a bowl of high-protein Greek yogurt is an excellent choice. Greek yogurt is strained more than regular curd, making it thicker and higher in protein. Simply scoop a generous portion into a bowl and top it with a handful of nuts like almonds and walnuts, and seeds like chia, flax, or pumpkin seeds for added protein, healthy fats, and fibre. A drizzle of honey or a few fresh berries can add natural sweetness and antioxidants, turning a simple ingredient into a wholesome and filling meal.
