The Promise of Transparency
In recent years, displaying calorie information on menus has become a key public health strategy. In India, the Food Safety and Standards Authority of India (FSSAI) has mandated that restaurant chains with ten or more outlets, among other large food service
establishments, must display the calorific value of each dish. The goal is simple and commendable: empower diners to make informed choices about what they eat, potentially encouraging healthier habits and prompting restaurants to offer lower-calorie options. The regulation even includes a reference statement: “An average active adult requires 2,000 kcal energy per day, however, calorie needs may vary,” to give consumers context. On paper, it’s a win-win for public health and consumer awareness. Studies show that a majority of consumers support the idea, believing it will inform their choices.
The Customisation Conundrum
The reality of how we eat, however, is rarely standard. Consider a simple order: a pizza. The menu might list the calories for a standard margherita. But what happens when you ask for extra cheese, swap bell peppers for olives, or request a different crust? Each modification alters the final calorie count, yet the number on the menu remains static. The same applies to requesting “no mayo” on a sandwich, swapping fries for a salad, or adding a sauce to a grilled dish. FSSAI regulations from 2018 noted that modified meals requested by the customer are exempt from labelling rules, acknowledging this inherent variability. While this is practical for restaurants, it leaves the health-conscious diner guessing. That number on the menu becomes a vague starting point rather than a reliable fact, and research shows that the actual calorie content of a prepared meal can vary significantly from what is stated.
When Sharing Defeats the Math
The modern dining table is often a shared space. From a spread of North Indian curries with various breads to a platter of kebabs or a table full of small plates, sharing is a fundamental part of our food culture. This poses an insurmountable challenge for individual calorie tracking. How do you calculate your personal intake from a shared thali? If you have two pieces of paneer tikka and your friend has three from a shared platter, who consumed what portion of the total calories listed? It’s a mathematical puzzle with too many variables. The calorie count for the entire platter is useful, but it fails to translate into a meaningful figure for the individual diner. This makes the labels less effective in communal dining situations, which are incredibly common.
An Imperfect Science in the Kitchen
Even for standard, non-customised dishes, the calorie counts themselves can be approximations. Unlike factory-packaged foods, restaurant meals are handmade. One chef might be slightly more generous with the cooking oil than another, or the portion size of a key ingredient might vary from plate to plate. To account for this, Indian regulations allow for a deviation of up to 25% in the declared calorific value. Furthermore, studies have found that menu items can sometimes contain significantly more calories than advertised, with lower-calorie or “healthier” options sometimes being the least accurate. For restaurants, accurately calculating and constantly updating this information for every single dish is a costly and time-consuming process, especially for smaller businesses or those that change their menus frequently.
More Information, Or More Anxiety?
While intended to help, the constant presence of calorie counts can have a downside. For some, it can increase anxiety around food, turning a social pleasure into a stressful calculation. For individuals with a history of or a predisposition to eating disorders, menu labelling can be particularly triggering, reinforcing an obsessive focus on numbers rather than nourishment. Some research suggests the impact on the general population's choices is modest at best. Many diners simply don’t notice the labels, and even among those who do, it doesn't always lead to ordering a lower-calorie meal. The labels can become just another piece of information noise in an already busy world, failing to drive significant behavioural change at a population level.
