This makes it possible to recreate your favourite crunchy snacks, like banana chips, without the guilt and excess grease associated with deep-frying.

Start with two to three firm, raw green bananas; Nendran are traditional, but any starchy cooking plantain will work well. Peel the bananas and slice them into very thin, uniform rounds, about 1/8th of an inch thick. A mandoline slicer is ideal for consistency. Immediately soak the slices in a bowl of cold water with a teaspoon of turmeric powder and a pinch of salt for about 10 minutes. This prevents browning and infuses the chips with their characteristic colour. Next, drain the banana slices thoroughly and pat them completely dry with a clean cloth or paper towels. This step is crucial for achieving maximum crispiness. Toss the dry slices in a bowl with just half a teaspoon of coconut oil until they are lightly coated. Preheat your air fryer to 180°C. Arrange the banana slices in a single, even layer in the air fryer basket, ensuring they don't overlap. You will likely need to cook in batches. Air fry for 10-15 minutes, shaking the basket or flipping the chips halfway through, until they are golden brown and crisp. The exact time will vary based on your air fryer and the thickness of your slices.

To elevate your air-fried chips from good to great, a few pro tips can help you capture that authentic regional flavour. First, do not skip the turmeric soak; it is essential for the classic colour and taste. While any neutral oil works, using a small amount of coconut oil will impart a more traditional aroma and flavour. Ensure your banana slices are as thin and uniform as possible. Thicker slices will have a softer, chewier texture rather than a definitive crunch. Finally, allow the chips to cool completely on a wire rack after removing them from the air fryer.
