By embracing a simple technique called cold steeping, you can unlock their nuanced flavours to create vibrant drinks that are both delicious and hydrating.
What is Cold Steeping?
Cold steeping, or cold infusion, is the gentle process of extracting flavour from ingredients using cold or room-temperature water over a longer period, typically several hours or overnight. Unlike hot brewing, which uses heat to rapidly pull out compounds, cold steeping is a slower, more delicate method. This gentle extraction process results in a smoother, naturally sweeter, and less bitter beverage because it leaves behind many of the tannins and acidic compounds that hot water can aggressively release. The final drink is often clearer in both appearance and taste, allowing the true character of the fruit to shine through without needing much, if any, added sugar.
Kokum: The Tangy Cooling Agent
Garcinia indica, or kokum, is a small, deep-purple fruit primarily found along India's Western Ghats. Traditionally, its dried rind is used as a souring agent in curries or made into a syrupy sherbet to combat the summer heat. Kokum is celebrated in Ayurveda for its cooling properties and as a digestive aid, often used to alleviate acidity and indigestion. It's rich in antioxidants like garcinol and anthocyanins, and contains hydroxycitric acid (HCA), which is linked to appetite suppression. When cold-steeped, kokum releases a beautiful ruby hue and a pleasant tartness that is incredibly refreshing.
Jamun: The Vibrant Indian Blackberry
Jamun, also known as black plum or Java plum, is a beloved summer fruit with a distinctive sweet, tangy, and slightly astringent taste. Its deep purple colour is a giveaway of its high anthocyanin content, a powerful antioxidant. Jamun is packed with nutrients like Vitamin C, iron, and potassium, which support immunity and heart health. Traditionally, it’s valued for its role in managing blood sugar levels due to its low glycemic index and compounds that may aid insulin sensitivity. Cold steeping jamun draws out its gorgeous colour and complex flavour, creating a base for a visually stunning and healthful mocktail.
How to Make a Cold-Steeped Kokum Refresher
Creating this drink is incredibly simple. Take 8-10 dried kokum rinds and place them in a large glass jar. Pour one litre of cold, filtered water over them. For a hint of complexity, you can add a few fresh mint leaves or a thin slice of ginger. Secure the lid and place the jar in the refrigerator for at least 6-8 hours, or overnight for a stronger flavour. The water will turn a lovely pinkish-red. Once steeped, strain the liquid into a pitcher. Taste it before adding any sweetener; you may find it's perfect as is. If you prefer a little sweetness, a small amount of jaggery or honey can be dissolved in. Serve chilled over ice with a sprig of mint for garnish.
Crafting the Perfect Jamun Mocktail
For the jamun infusion, take about a cup of fresh, ripe jamuns. Gently crush them to break the skins—no need to deseed at this stage. Place the crushed fruits in a jar and cover with one litre of cold, filtered water. You can add a pinch of black salt (kala namak) and the juice of half a lime to enhance the flavours. Let it steep in the refrigerator for 4-6 hours. The water will take on a brilliant purple colour. Strain the liquid, pressing gently on the fruit pulp to extract all the juice. Discard the seeds and skin. Serve this beautiful purple cooler chilled, garnished with a lemon wheel or a few fresh mint leaves.
