A Scoop of Wellness
The rise of plant-based gelato isn't just about a new dessert; it's a reflection of a larger shift in urban Indian lifestyles. As awareness around health, sustainability, and lactose intolerance grows, consumers are actively seeking alternatives that
don't compromise on taste. Veganism is gaining momentum in metropolitan areas, with many people drawn to plant-based diets for their perceived health benefits. This evolving consumer mindset has created the perfect market for desserts that are both indulgent and aligned with modern wellness values. Brands are responding to this demand by creating frozen desserts that are free from dairy, and often gluten and artificial additives, making them accessible to a wider audience looking for 'clean-label' treats.
Crafting Creaminess Without Dairy
The biggest challenge for any non-dairy frozen dessert is achieving that rich, creamy texture traditionally provided by milk and cream. India's new gelato artisans have mastered this through innovative techniques and ingredients. Instead of cow's milk, they use a variety of plant-based milks, including coconut, almond, soy, and oat milk. These alternatives provide a surprisingly lush base. For example, full-fat coconut milk is a popular choice for its high-fat content, which lends a decadent mouthfeel, while oat and almond milks offer a more neutral canvas for other flavours to shine. The result is a gelato that is smooth and satisfying, proving that dairy is no longer a prerequisite for a premium frozen dessert experience.
A Fusion of Flavours
While the base may be plant-powered, the flavours are where these modern gelato shops truly express their creativity. They are moving beyond simple chocolate and vanilla, offering a menu that is both globally inspired and distinctly Indian. You can find artisanal brands offering exciting Indian-inspired flavours like Paan, Thandai, and Saffron Pistachio. Mumbai-based Nomou, for instance, has gained popularity for its handcrafted gelatos that feature such unique local tastes. At the same time, brands like Minus 30 and Brooklyn Creamery are perfecting vegan versions of international favourites, including Dark Chocolate, Green Tea Matcha, and Espresso Cookie. This blend of traditional and contemporary flavours caters to a diverse urban palate, appealing to those seeking both nostalgia and novelty.
The Entrepreneurs Behind the Trend
This movement is being driven by passionate founders who are often vegans themselves or were inspired by a personal health journey. Husband-and-wife duo Hemali Gala and Samir Pasad started Nomou (a play on 'No-Moo') after adopting a vegan lifestyle decades ago. They began by making desserts for their own family and eventually launched their brand in 2020, focusing on small-batch production and locally sourced ingredients. Similarly, sisters Gayatri Rattha and Shivanie Mirchandani founded Minus 30 in 2016, a handcrafted gelato brand that now includes a popular vegan and sugar-free range available across the country. These entrepreneurs are not just selling a product; they are building a community around a shared philosophy of conscious indulgence.
