Why 'Tastes Like' Is a Trap
We’ve all done it. When a recipe calls for an ingredient we don't have, our first instinct is to grab something that tastes similar. Sometimes this works, but often it leads to a disappointing outcome—a cake that doesn't rise, a sauce that’s too thin,
or a kebab that falls apart. That's because every ingredient in a recipe has a job to do. Flavour is just one part of its role. More important are its structural and textural contributions. Understanding an ingredient's primary function is the first step to becoming a more intuitive and adaptable cook.
The Underrated Power of Texture
Texture is the architecture of a dish, defining how it feels in the mouth. Think of the creamy richness butter or full-fat yogurt adds to a curry, the chewy resistance of a good chapati, or the satisfying crunch of a perfectly fried pakora. When you substitute an ingredient, you need to consider if you're losing a critical textural element. For instance, swapping butter for oil in a cookie recipe might work, but the texture will change; oil provides moistness, while butter contributes to a richer, more tender crumb. In Indian cooking, creating a creamy gravy without dairy means finding an alternative that delivers on fat and smoothness, such as a fine paste of cashews or coconut cream. The goal is to replace the function, not just the name.
Binding and Structure: The Unseen Heroes
Binding is the 'glue' that holds food together, while structure gives it shape and integrity. Eggs are the classic example of an ingredient with multiple jobs. They bind ingredients, provide moisture, add richness, and act as a leavening agent to help things rise. A simple one-to-one swap is often impossible. If you need a substitute for an egg in a brownie recipe, where its primary job is binding and adding moisture, a 'flax egg' (ground flaxseed mixed with water) is an excellent choice. However, if you're making a light, airy sponge cake where the egg's leavening power is crucial, that same flax egg will lead to a dense, flat result. In that case, you’d need a substitute that mimics leavening, like a combination of water, oil, and baking powder.
Putting Theory Into Practice
Let’s apply this. Imagine you're making vegetable cutlets but have run out of potatoes, the traditional binder. Just adding more vegetables will result in a crumbly mess. What you need is a binding agent. Boiled and mashed sweet potato is a great option as it provides a similar starchy, binding texture. Alternatively, a bit of soaked bread or gram flour (besan) can also do the job beautifully. Another common scenario is running out of maida (all-purpose flour) for making naan. Simply swapping it for whole wheat atta requires an adjustment. Atta absorbs more liquid and has a different protein structure, so you may need more water and a longer resting time to achieve a soft, pliable dough. It's about respecting the function of the original ingredient.
A New Way to Read Recipes
Start looking at ingredient lists not as a rigid set of rules, but as a team of players, each with a specific role. Ask yourself: What is this ingredient’s main job here? Is it providing structure, like flour? Is it making the dish tender, like fat? Is it adding moisture and leavening, like eggs or buttermilk? Is it the primary binder, like a potato in a tikki? When you start thinking this way, you empower yourself to make intelligent substitutions. You move from being a recipe follower to a recipe interpreter, opening up a new world of creativity and resourcefulness in your kitchen.
