Choose Your Champion Mangoes
The success of your frozen mango stash begins at the market. While overripe, ultra-soft mangoes are perfect for aamras, they don’t hold up well to freezing. For this trick, you need mangoes that are ripe and flavourful but still firm to the touch. Varieties
like Alphonso, Kesar, or Totapuri that have a good flesh-to-seed ratio and less fibre are ideal. Gently press the fruit; it should have a slight give but not feel mushy or have soft spots. A fragrant, sweet smell at the stem is your best indicator of a perfectly ripe mango ready for its chilly transformation.
The Art of the Perfect Cube
Once you have your mangoes, the goal is to create uniform pieces that are easy to use later. Wash the mangoes thoroughly. The most efficient way to dice them is the 'hedgehog' method: slice the two 'cheeks' off the flat seed. With a small knife, score the flesh of each cheek in a grid pattern, cutting down to the skin but not through it. Then, either scoop out the cubes with a spoon or gently push the skin from underneath to pop the cubes outward. Cut the remaining flesh from around the seed. Aim for bite-sized cubes, roughly half an inch to an inch. Uniformity is key, as it ensures they all freeze at the same rate.
The Game-Changing Flash Freeze
This is the 'trick' that makes all the difference. Do not, under any circumstances, throw your freshly cut mango cubes directly into a bag and into the freezer. This is the fast track to a solid, unusable brick of frozen mango. Instead, line a baking sheet or any large, flat tray with parchment paper or a silicone mat. Spread your mango cubes across the tray in a single, even layer. Make sure the pieces aren't touching. This simple step is called flash freezing. Place the entire tray flat in your freezer for 2-3 hours, or until the cubes are completely solid.
Bagging for Long-Term Success
Once your mango cubes are individually frozen solid, you can finally bag them. Because they are already frozen separately, they won't stick together in the bag. You'll be able to pour out exactly how many you need, when you need them. Transfer the frozen cubes into a heavy-duty zip-top freezer bag or an airtight container. If using a bag, try to remove as much air as possible before sealing to prevent freezer burn. You can do this by sealing the bag almost all the way, then inserting a straw into the small opening, sucking out the remaining air, and quickly sealing it shut. Label the bag with the date; your mangoes will stay perfect for up to 6 months.
