To serve, simply mix two or three tablespoons of the concentrate with a glass of chilled water or soda, add ice, and garnish with a mint leaf.

Add about half a cup of water and blend until you have a smooth, fragrant paste. Pour this concentrate into a large jug. Add three to four glasses of chilled water and stir well until everything is combined. You can strain the mixture if you prefer a smoother drink, or leave the fine mint particles in for more texture and flavour.

Making these drinks festive is all about the presentation. Serve them in traditional glasses or tall highball glasses to show off their beautiful colours.
