Diwali is a time of light, joy, and indulgence, where traditional sweets take centre stage. This year, why not add a modern twist to a beloved classic? Elevate your festive platter by transforming familiar Kaju Katli into decadent truffles.
A Modern Twist on a Festive Favourite
Kaju Katli,
the smooth, diamond-shaped fudge made from cashews, is a cornerstone of Diwali celebrations across India. Its delicate, nutty flavour is instantly recognisable and beloved by all ages. While tradition is beautiful, there's also joy in innovation. This recipe reimagines Kaju Katli not as the flat barfi we know, but as bite-sized, spherical truffles. These elegant orbs are then dipped in a coating of rich melted chocolate, creating a delightful fusion that is both familiar and exciting. It’s a sophisticated upgrade that looks impressive on any dessert table and makes for a wonderful, homemade gift for friends and family.
Gathering Your Ingredients
The beauty of this recipe lies in its simplicity. The base is essentially a classic Kaju Katli, requiring only a few core ingredients. You will need high-quality, raw cashews, which should be at room temperature to prevent them from becoming oily when ground. You’ll also need sugar, water, a touch of ghee for richness, and a flavouring agent like cardamom powder or rose water. For the truffle coating, select a good quality dark, milk, or even white chocolate that melts well. For decoration, have some chopped pistachios, edible silver leaf (vark), or a sprinkle of cocoa powder ready. Some innovative recipes even suggest adding a surprise filling, like a dab of gulkand (rose petal jam), in the centre.
Crafting the Kaju Katli Base
The first step is to create the cashew dough. Begin by grinding the room-temperature cashews into a fine powder, being careful not to over-grind them into a paste. Sifting the powder ensures there are no large pieces, which is key to a smooth texture. Next, prepare a sugar syrup by dissolving sugar in water in a heavy-bottomed pan over medium-low heat. The consistency of the syrup is crucial; many traditional recipes aim for a 'one-string' consistency. Once the syrup is ready, add the cashew powder and stir continuously on low flame. The mixture will thicken and start to pull away from the sides of the pan. At this point, mix in the ghee and your chosen flavouring, like cardamom powder. Transfer the dough to a parchment-lined plate and let it cool just enough to handle.
Shaping and Coating Your Truffles
Once the cashew dough is warm, but not hot, knead it gently for a minute until it becomes smooth. Now, pinch off small, uniform portions and roll them between your palms to form smooth, crack-free balls. For an even more professional look, try to keep the truffles consistent in size. If you're adding a filling like gulkand, flatten a ball of dough in your palm, place a tiny amount of filling in the centre, and carefully enclose it, rolling it back into a perfect sphere. Once all the balls are shaped, place them in the refrigerator for about 20–30 minutes to firm up. While the truffles are chilling, melt your chocolate in a double boiler or in short bursts in the microwave. Dip each chilled kaju ball into the melted chocolate, ensuring it's fully coated. Lift it out with a fork, gently tapping to shake off any excess chocolate.
Finishing Touches and Storage
Place the chocolate coated truffles onto a tray lined with parchment paper. Before the chocolate sets completely, sprinkle them with your chosen toppings. Finely chopped pistachios add a lovely colour contrast and crunch, a dusting of cocoa powder offers a sophisticated finish, and a tiny piece of edible silver leaf gives it that classic mithai elegance. Allow the truffles to set completely in the refrigerator for another 15–20 minutes. These Kaju Katli Truffles are now ready to be served. They can be stored in an airtight container in the refrigerator for up to three days, making them a great make–ahead option for your festive preparations. For gifting, arrange them in mini cupcake liners inside a decorative box for a truly special homemade present.
