Don’t worry, it has nothing to do with gardening. A shrub, also known as a drinking vinegar, is a concentrated syrup made from a combination of fruit, sugar, and vinegar. The word itself is derived from the Arabic 'sharāb', meaning 'to drink', which also gave
us words like syrup and sherbet. Its origins trace back centuries as a method to preserve fruit long before refrigeration was available. By steeping fruit in vinegar, often with sugar, people could create a shelf-stable concentrate that could be mixed with water or spirits for a flavourful drink. This practice was popular in Colonial America and 17th-century England but eventually faded with the advent of modern refrigeration and commercial soft drinks.
The Modern Cold-Pressed Revival
The shrub making a comeback in metro cafes today has received a modern upgrade. While traditional methods sometimes involved heating the fruit, which could dull its fresh taste, the contemporary approach often favours a 'cold-process'. This involves macerating fresh fruit with sugar to draw out the natural juices and then combining that syrup with vinegar. The 'cold-pressed' element you see on menus takes this a step further, using hydraulic presses to extract maximum juice from the fruit without generating heat, preserving more of the raw flavour and nutrients. The result is a vibrant, intensely fruity syrup that forms the base of the drink, a far cry from a simple flavoured vinegar.

While not a magic health tonic, a shrub is often a lower-sugar, more natural alternative to commercial colas and packaged juices.

This trend is becoming increasingly visible in cafes and bars across metros like Delhi, Mumbai, and Bengaluru. You’ll find them starring as artisanal sodas, where the shrub syrup is simply mixed with sparkling water for a refreshing mocktail. But their versatility doesn’t end there. Bartenders are embracing shrubs as a secret weapon, using their sweet-and-sour character to provide the acidic backbone in inventive cocktails, offering a more complex alternative to lime or lemon juice. They provide a way for establishments to offer unique, house-made drinks that stand out, tapping into the demand for premium and craft beverages.
