The Ultimate Comfort Meal: Vegetable Khichdi
Khichdi is the quintessential Indian comfort food—warm, nourishing, and incredibly easy to digest. It’s a complete meal in a single pot, combining rice and lentils to form a complete protein, along with any vegetables you have on hand. This makes it perfect
for those evenings when you have zero energy but still crave something wholesome. Using a pressure cooker makes the process even faster, delivering a delicious meal in under 30 minutes. You don't need fancy ingredients; just some basic rice, dal, and a few common spices are enough to create a satisfying dish that tastes like home.
Simple Vegetable Khichdi Recipe
This recipe is incredibly forgiving. Feel free to use any rice, dal, or vegetables you have. To start, wash half a cup of rice and half a cup of moong or toor dal together until the water runs clear. In a pressure cooker, heat a tablespoon of ghee or oil and add a teaspoon of cumin seeds. Once they splutter, add one chopped onion and sauté until golden. Add ginger-garlic paste, one chopped tomato, and any mixed vegetables you like—carrots, peas, potatoes, and beans work well. Stir in spices like a quarter teaspoon of turmeric powder, half a teaspoon of red chilli powder, and salt to taste. Add the washed rice and dal mixture, followed by about four cups of water (use less for a thicker consistency). Secure the lid and cook for 3-4 whistles on medium flame. Let the pressure release naturally before opening.
A Healthy Twist: One-Pot Millet Pulao
For a modern and even healthier alternative, try a millet pulao. Millets are ancient grains making a comeback for good reason. They are naturally gluten-free and packed with more fibre, protein, and essential nutrients like iron and magnesium compared to white rice. With a lower glycemic index, they release energy slowly, keeping you full for longer and preventing blood sugar spikes, which is great for long study sessions. Foxtail, Kodo, or Little millet are all excellent choices and cook just as quickly as rice in a single pot.
Easy Millet Pulao Recipe
To make millet pulao, start by rinsing one cup of any millet (like foxtail or kodo) a few times and soaking it for about 20-30 minutes if you have time. In a pot or pressure cooker, heat some oil and add whole spices like a bay leaf and a cinnamon stick. Add one sliced onion and sauté until it turns light brown. Add ginger-garlic paste, slit green chillies, and one chopped tomato, cooking for a couple of minutes. Toss in a cup of mixed vegetables. Drain the soaked millet and add it to the pot, stirring gently. Pour in two cups of water, add salt, and bring to a boil. Cover and cook on a low flame for about 15 minutes or until all the water is absorbed. If using a pressure cooker, two whistles are usually enough. Let it rest for a few minutes before fluffing with a fork.
Tips for One-Pot Success
Mastering one-pot meals is a valuable student hack. Always sauté your onions, ginger, and garlic well, as this forms the flavour base for the entire dish. Don't be afraid to use whatever vegetables are available in the fridge; it's a great way to clean out your veggie drawer. For both khichdi and pulao, serving with a side of curd or pickle instantly elevates the meal. Cooking in bulk can also save time; make a larger batch and store it in the fridge for the next day.
