different meals. This ‘bhuna masala’ or onion-tomato base is the secret weapon used in many Indian restaurant kitchens to speed up service. By investing about an hour over the weekend, you can create a delicious base that cuts your daily cooking time down to just 15-20 minutes. It's a simple, effective way to enjoy wholesome, home-cooked food without the daily grind of starting from scratch. You save money, eat healthier, and reclaim your evenings.
The Master Curry Base Recipe
This recipe makes enough base for three single-portion meals. You can easily double the ingredients to make a larger batch for the week. Ingredients: 4 large onions, finely chopped 6 ripe tomatoes, pureed 1 tablespoon ginger-garlic paste 2 green chillies, slit (optional) 1 teaspoon turmeric powder 1.5 teaspoons red chilli powder (adjust to taste) 2 teaspoons coriander powder 1 teaspoon cumin powder 3 tablespoons vegetable oil or ghee Salt to taste Method: 1. Heat oil or ghee in a heavy-bottomed pan or kadai over medium heat. 2. Add the chopped onions and sauté them patiently. This is the most crucial step. Cook for 15-20 minutes on low to medium heat, stirring occasionally, until they are deeply golden brown and sweet. 3. Add the ginger-garlic paste and green chillies. Sauté for another two minutes until the raw smell disappears. 4. Add all the powdered spices: turmeric, red chilli, coriander, and cumin. Stir for about 30 seconds until fragrant. Be careful not to burn them. 5. Pour in the tomato puree and add salt. Mix well. Cook this mixture for 10-15 minutes, stirring occasionally, until the masala thickens and you see oil starting to separate from the sides. The base is now ready.
Smart Storage for a Fresh Week
Once your curry base is cooked, let it cool down completely to room temperature. This is important for food safety and to prevent condensation. Divide the base into three equal portions and store them in separate airtight containers. Label them if you like. The base will stay fresh in the refrigerator for up to five days, making it perfect for your three-day meal plan. If you make a larger batch, you can also freeze portions in ice cube trays or freezer-safe bags for up to two months.
Day 1: Creamy Paneer Delight
Tonight, we’ll turn the base into a quick and satisfying paneer curry. In a pan, heat one portion of your curry base. Add about 100g of cubed paneer. Pour in about a quarter cup of water or milk to achieve your desired gravy consistency. Let it simmer for 5-7 minutes until the paneer is soft. For a richer flavour, you can add a tablespoon of cream or cashew paste. Garnish with kasuri methi (dried fenugreek leaves) and serve hot with rotis or parathas.
Day 2: Homestyle Egg Curry
For your second meal, a simple egg curry is on the menu. Take your second portion of the curry base and heat it in a pan. While it warms up, boil two eggs and peel them. Add a half-cup of water to the base and bring it to a gentle boil. You can add a pinch of garam masala at this stage for extra aroma. Gently slice the boiled eggs in half and place them in the gravy. Let them simmer for about 5 minutes to absorb the flavours. Garnish with freshly chopped coriander and enjoy with steamed rice.
Day 3: Quick Mixed Vegetable Sabzi
On the final day, use the last portion of your base to whip up a healthy vegetable sabzi. Heat the base in a pan. Add a cup of mixed vegetables of your choice — think carrots, peas, beans, cauliflower, or bell peppers. You can use fresh or frozen vegetables. Add a splash of water, cover the pan, and cook for 10-12 minutes until the vegetables are tender. Stir occasionally. This quick stir-fry curry pairs perfectly with dal and rice or can be eaten with chapatis for a light and nutritious dinner.
