The Magic of the Blue Mountains
The Nilgiris, or 'Blue Mountains', of Tamil Nadu are famous for tea, but they also produce some of India's most distinctive high-altitude Arabica coffee. Grown at elevations up to 2,000 metres, the coffee beans mature slowly in the cool, misty climate.
This slow ripening process allows the beans to develop a complex and aromatic flavour profile. Nilgiri coffee is often described as clean, light-bodied, and subtly sweet, with delicate floral and citrus notes. Much of this coffee is shade-grown by indigenous communities who intercrop the coffee plants with fruit trees and spices like pepper and jackfruit, which adds to the unique character of the beans. This results in a coffee that is aromatic and mild, making it an excellent candidate for a brewing method that highlights nuance over intensity.
The Gentle Art of Cold Brewing
Unlike regular iced coffee, which is just hot coffee cooled down, cold brew is a completely different beverage. It’s made by steeping coarsely ground coffee in cold or room-temperature water for an extended period, typically 12 to 24 hours. Heat is never applied. This slow, gentle infusion changes the chemistry of the coffee. Hot water is an aggressive solvent, quickly pulling out acids and bitter compounds. Cold water, on the other hand, is more selective. It extracts the smooth, sweet, and chocolatey flavour notes while leaving many of the harsh, acidic compounds behind. The result is a coffee that is significantly less acidic—by some estimates 60-70%—and naturally sweeter, with a smoother, rounder mouthfeel.

The natural characteristics of Nilgiri coffee—its bright, floral, and fruity acidity—are perfectly preserved without being overpowering. Instead of a bold, intense coffee, you get a beverage that is light, clean, and incredibly easy to drink. The 'artisanal' part of the equation is just as important. In India, a new wave of small-batch roasters and cafes are focusing on sourcing high-quality, single-origin beans directly from farmers. Brands like Blue Tokai, Sleepy Owl, and others have championed the story behind the coffee, from the specific estate to the roasting date. For Nilgiri cold brew, this means a focus on beans grown by small, often indigenous, farmer collectives who use traditional, sustainable methods. This attention to detail extends to the brewing process itself. Artisanal producers carefully control the grind size, water quality, and steep time to create the perfect extraction, ensuring every bottle or glass is consistent and delicious. This craft approach elevates a simple drink into a premium experience.
