The 10-Minute Poha Promise
Poha, or flattened rice, is a breakfast staple across India for good reason: it’s light, satisfying, and incredibly quick to prepare. The key to perfect, fluffy poha that doesn't turn mushy is in the preparation. Forget soaking for hours; the modern method
is much faster. Simply place your thick poha in a colander and rinse it under running water for about 30 seconds. Let it drain and rest for about five minutes while you prepare the tempering. This allows the grains to soften perfectly without clumping together. Heat a little oil in a pan, and once it's warm, add mustard seeds, letting them splutter. Follow with curry leaves and finely chopped onions. Sauté for a couple of minutes until the onions are translucent, then add turmeric powder. Now, add your rested poha, a pinch of salt, and a little sugar to balance the flavours. Gently fold everything together over low heat for two to three minutes until the poha is heated through and has absorbed the vibrant yellow of the turmeric. A final squeeze of lemon juice and a garnish of fresh coriander leaves and you have a complete, flavourful breakfast ready in minutes.
Speedy & Savoury Paneer Bhurji
Paneer Bhurji, a delicious scramble of Indian cottage cheese, is a protein-packed way to start your day that feels indulgent but is surprisingly quick. It is the vegetarian answer to scrambled eggs and is just as versatile. To get this on the table in 10 minutes, efficiency is key. Start by heating oil or a knob of butter in a pan over medium heat. Add cumin seeds and let them sizzle. Immediately follow with finely chopped onions, green chillies, and ginger-garlic paste. Sauté for about three to four minutes until the onions soften and become translucent. Next, add chopped tomatoes and cook for another minute until they begin to break down. Now, it's time for the spices. Add turmeric powder, red chilli powder, and a touch of garam masala. Stir for a few seconds to cook the raw spices before adding the star of the dish: crumbled paneer. You can use store-bought paneer or make your own. Mix well, ensuring the paneer is coated in the masala, and cook for just two to three minutes. Overcooking can make the paneer chewy, so a short cooking time is perfect. Garnish with fresh coriander and serve hot with toast or roti for a filling and fast breakfast.
Instant Oats Chilla for a Healthy Rush
For a breakfast that is both healthy and fast, the Oats Chilla is a fantastic choice. This savoury pancake is loaded with fibre and can be customised with your favourite vegetables. Unlike traditional recipes that require grinding oats, you can use instant or quick-cooking oats directly. In a mixing bowl, combine one cup of instant oats, a few tablespoons of besan (gram flour) to help with binding, and spices like turmeric, red chilli powder, and cumin powder. To this dry mix, add finely chopped vegetables like onions, capsicum, tomatoes, and fresh coriander. Gradually add water while mixing to form a batter with a consistency similar to that of a pancake batter—not too thick, but not too runny. Let this batter rest for five to ten minutes; the oats will absorb some of the water and soften. Heat a non-stick tawa or pan and lightly grease it with oil. Pour a ladleful of the batter and spread it gently into a circle. Cook on medium heat for two to three minutes per side, until it's golden brown and cooked through. These chillas are delicious on their own or served with a side of curd or your favourite chutney.
Tips for an Even Faster Morning
While these recipes are inherently fast, a little preparation can make your mornings even smoother. Consider chopping vegetables like onions, tomatoes, and capsicum the night before and storing them in an airtight container in the refrigerator. For Paneer Bhurji, you can crumble the paneer in advance. For Oats Chilla, you can even prepare the dry mix of oats, besan, and spices ahead of time. When you wake up, all you need to do is add the wet ingredients and vegetables. Keeping staples like pre-washed curry leaves and coriander, and having your spice box organised, can also shave precious minutes off your cooking time. These small steps in meal prep ensure that a nutritious, home-cooked breakfast is always a convenient option, no matter how little time you have.
