How They're Made: Pressure vs. Processing
The fundamental difference between these two types of oil lies in their extraction method. Cold-pressed oils, often known by traditional names like 'kachi ghani' or 'marachekku', are made by simply crushing oilseeds like mustard, groundnut, or coconut
at low temperatures. This mechanical process, free from high heat or chemical solvents, is designed to preserve the oil's natural character. Refined oils, on the other hand, undergo a multi-step industrial process. The oil is typically extracted using high heat and chemical solvents, then it is purified through processes like bleaching and deodorizing to create a neutral-tasting, uniform product with a long shelf life.
The Nutritional Divide
The gentle extraction of cold-pressed oils means they retain more of their natural goodness. They are often richer in essential fatty acids, antioxidants, and vitamins, like Vitamin E, that are naturally present in the seed. This minimal processing helps preserve the compounds that contribute to heart health and reduce inflammation. Conversely, the high heat and chemical treatment used to make refined oils can strip away these beneficial nutrients. While the refining process removes impurities, it also leads to a significant loss of vitamins and antioxidants, resulting in an oil that provides calories but fewer nutritional benefits.
Understanding Smoke Points
The smoke point is the temperature at which an oil begins to break down, smoke, and release harmful compounds. This is where refined oils have a distinct advantage. Because the refining process removes free fatty acids and other impurities, refined oils generally have higher smoke points, often above 230°C. This makes them stable and suitable for high-temperature cooking methods like deep frying. Cold-pressed oils have lower smoke points because they retain more of their natural components. For example, cold-pressed groundnut oil's smoke point is around 160-180°C, and cold-pressed coconut oil's is about 177°C. Heating them beyond this point can destroy their nutrients and create off-flavors.
A World of Difference in Flavour
One of the most noticeable differences is in taste and aroma. Cold-pressed oils retain the distinct flavour and scent of their source material. Think of the pungent kick of cold-pressed mustard oil, the nutty sweetness of groundnut oil, or the rich aroma of coconut oil. This makes them excellent for enhancing the flavour of dishes, especially in traditional recipes. Refined oils are deliberately made to be neutral. The deodorizing process removes almost all flavour and aroma, ensuring the oil doesn't interfere with the taste of the ingredients being cooked. This makes them versatile, but they don't add any character to the final dish.
Your Kitchen Guide: When to Use Each
So, which oil belongs where? It’s not about one being universally 'good' and the other 'bad', but about using the right oil for the right task. Use flavourful cold-pressed oils for dressings, drizzling over finished dishes, and for low-to-medium heat cooking like preparing tadkas or sautéing vegetables where their aroma can shine. For everyday sabzis and dals, the temperatures rarely exceed the smoke point of most cold-pressed oils. Reserve refined oils for high-heat applications where a high smoke point is critical. This includes deep-frying pakoras, puris, or searing ingredients at very high temperatures. Having both types in your pantry allows you to cook a wide range of dishes safely and healthily.
