often involves significant amounts of oil, leading to health concerns and a messy kitchen. Enter the air fryer, a countertop appliance that has revolutionised home cooking. Mastering the Samosa

Perfecting the Pakora
Pakoras, or vegetable fritters, present a different challenge. A traditional deep-frying batter can be too thin and drip through the air fryer basket. The key to successful air-fried pakoras is a slightly thicker, stickier batter. The batter should be thick enough to cling to the vegetables without being runny. Once your batter is ready, drop spoonfuls into the preheated air fryer basket, making sure to leave space between each one. Cook for around 12-15 minutes, shaking the basket halfway through, until they are crispy and golden. The result is a delightfully crunchy pakora that’s light and flavourful, perfect for enjoying guilt-free with your evening chai.
Beyond Samosas and Pakoras
The air fryer's versatility extends to a wide range of other Indian snacks. Aloo Tikki, the popular potato patty, becomes wonderfully crisp on the outside and fluffy on the inside with just a minimal amount of oil. You can also make healthier versions of Hara Bhara Kabab, Dal Vada, and Paneer Tikka. Even traditionally non-fried snacks can be enhanced. For instance, you can toast nuts and roast spices for chaats, or even bake items like naan or mathri for a quick and convenient alternative to other cooking methods. The possibilities are vast, encouraging creative experimentation in the kitchen.

Many now come with preset cooking functions, some even specifically for Indian dishes like tikkas or samosas, taking the guesswork out of timing and temperature.
